Presentation of the Unit
The CB 20 bread oven is designed to maintain small loaves at the right
temperature in order to produce hot and soft hot dogs.
The product is intended for professional use and should be operated by qualified
personnel. It is not designed for domestic use and therefore cannot be made available to
clientele.
It must be installed in conformity with current standards by a qualified installer.
The nameplate is at the back of the product.
Installation
This unit operates at a power supply of 230 or 110 V AC as indicated on the
nameplate. It must not be connected to a DC supply at the risk of causing irremediable
damage to the equipment.
The power consumed is as follows:

This bread oven must be connected to a wall outlet, preferably connected to
ground. Connecting it to a plug that is already overloaded could cause malfunctioning
and damage in the electric installation.

Operation
When you turn the knob to the desired position, the red indicator light will come on
until the desired temperature is reached in the oven.

To keep the bread soft and attractive, it is advisable to maintain the temperature at an
average level. The maximum temperature setting must only be used for short periods
of time.
Be sure to keep water in the tray at all times. A volume of approximately 30 cl of
water will be needed. In order not to soak the small loaves when the drawer is
opened, the tray has an anti-wave cross under the perforated plate.
When small loaves are added during operation, be sure to place the remaining loaves
at the front so as to leave the new loaves sufficient time to warm up.
Do not heat the same loaf several times because it could cause it to take on a
disagreeable taste.
If the loaves are too dry, it will be necessary to reduce the temperature for better
heating.
When heating for the first time, set the thermostat to maximum for approximately one
hour with the container empty. The bread oven may give off an odor and smoke.
This is to be expected because of the new insulator.
The use of detergent is possible as long as it is not excessively aggressive. Be sure to
rinse the areas that have been in contact with the product.
Cleaning
To clean the tray, there is no need to disassemble the entire drawer. The tank is
removable and it is simply necessary to pull the drawer out to the maximum position,
remove the cover and take the tray out from the top. It is advisable to perform this
operation when the oven is cold.
However, it is recommended to remove the entire drawer once a week in order to
clean the inside of the oven. To do this, open the drawer to its fully open position,
grasp it in both hands and raise it by pulling it slightly forward. The slides will thus
come free of the supporting rollers.
To reassemble the drawer, perform the same operation in the opposite order.
It is advisable to clean the container after each use to guarantee its long life duration
and to prevent unsightly scale from forming.
To preserve the oven new-looking, never use an abrasive sponge or rock wool to clean
it.
Never clean your bread oven with a jet of water because infiltration could cause
damage to it.
