03. INSTRUCTIONS FOR VACUUM SEALING.
1. Connect the vacuum sealer to the mains and
turn on (5).
2. We recommend waiting around 15 seconds
for the machine to heat up before beginning to
seal the first item.
3. Place the product you want to keep vacuum
packed in a bag for vacuum packaging of the
appropriate size, leaving at least 5 cm between
the edge of the bag and the food.
4. Lift the lid (1). Unroll the bag and place the
strip to be sealed on the non-stick sealing bar (9),
making sure that it is centred within the margins
of the vacuum chamber (8).
5. Lower the lid. The bag will now be locked
inside the vacuum chamber due to the pressure
exerted by the closing system. If you wish to open
the vacuum sealer after it has been closed, lift the
lid gently.
6. Press the "START" button on the digital
display or the handle to begin the vacuum sea-
ling process. Press lightly with the handle and the
pressure exerted by the machine's "easy closing
system" will be sufficient to begin compressing
the bag on activation of the vacuum pump. The
vacuum chamber may fail to lock onto the bag
properly if the vacuum seals (10) are worn or da-
maged. In this case, it is advisable to proceed
with the replacement of the vacuum seals.
7. This model of vacuum sealer is designed for
operation with an automatic programme. Upon
pressing the "START" button on the digital display
or the handle, the vacuum sealer begins an auto-
matic sealing sequence, changing automatically
between the suction and the sealing stages. The
vacuum sealer is equipped with a vacuum gauge
which begins sealing when a vacuum level higher
than the selected vacuum level is reached.
8. The bag sealing process can also be started
manually by pressing the "SEAL" button on the
digital display or the handle. This option allows
a bag to be sealed before the maximum vacuum
level has been reached. This function is especia-
lly useful when packing fragile products or foods
that must not be crushed such as cakes, pastry,
fish, etc.
9. The digital display keeps the user informed
about the vacuum progress:
- Once you press the "START" button the suction
stage begins.
- The sealing phase countdown then starts.
10. The machine stops automatically once sealing
is finished. The lid can be raised gently after the
"beep" which signals that it has been automati-
cally released.
Setting Sealing Time
The Professional Digit 40 Neo vacuum sealer
enables sealing time to be set by using the digital
display. With the machine at rest press the +/- (J)
keys to increase or decrease the sealing time.
Sealing time should be adjusted according to bag
thickness and the sealing bar temperature. Elma
recommends a sealing time of 2-3 seconds.
