Unique in the world of vacuum packing machines, the Cuisson line offers a series of additional functions that were espe-
cially designed for food vacuum preparation and cooking.

6.5.1 CUSTOMISAblE PROGRAMS

It is possible to store up to 20 customised programs for vacuum storage or cooking, assigning them a name according to
the procedures described in later chapters. The parameters that can be stored are the desired vacuum level, the percent-
age of gas to be injected and the duration of sealing.
6.5.2 PRE-SET PROGRAMS
There are pre-set programs. The sealing time and in some cycles the vacuum to be achieved and the percentage of GAS
to be introduced can be modified.
The correct product core temperature of 3°C must always be ensured. It is advisable to check at the outset the actual
suitability of the pre-set program to be used and any specific factors present in the product (temperature, quality, condi-
ments, texture etc.).
Some of these programs, designed for products susceptible to squashing (baked products, desserts, fresh pasta) require
the enabled gas option.In these cycles, it is possible to modify the vacuum value to be achieved and the percentage of
gas to be introduced.
If the program does not fully meet the product storage needs, it is advisable to program a specific cycle.
• Generic program for COOKING: standard program for foods intended for vacuum cooking.
• Generic program for PRESERVATION: standard program (without the introduction of gas) for food to be preserved.
• Specific program for VEGETABLES.
• Specific program for MEAT.
• Specific program for CHICKEN.
• Specific program for FISH.
• Specific program for BAKED PRODUCTS.
• Specific program for DESSERTS.
• Specific program for FRESH PASTA.
• Specific programme for FLOUR.
• Specific programme for SPICES.
