In a medium bowl, use an electric mixer or whisk to combine the milk and granulated sugar until the sugar is dissolved,
about 1 - 2 minutes on low speed.
Incorporate the cream plus any strawberry juice and vanilla.
Turn on the ice cream maker, pour the mixture into the basket and let it mix until well thickened, about 30-40 minutes.
Add the sliced strawberries in the last 5 minutes of freezing.
Note: the ice cream will have a very pale pink "natural" appearance, if you want a more intense color, add a few drops
of red food coloring until you get the desired color.

FRESH LEMON SORBET
Ingredients for 8 cups:
350g of sugar
420gr of pure water
120g of freshly squeezed lemon juice
½ tablespoon of finely chopped lemon zest
Combine the sugar and water in a medium saucepan and bring to a boil over medium-high heat.
Reduce heat to low and cook without stirring until the sugar dissolves, about 3 - 5 minutes.
Cool completely. This is called a simple syrup and can be prepared in advance in larger quantities to have fresh lemon
sorbet on hand.
Keep refrigerated until use.
After cooling, add the lemon juice and zest, stir to combine.
Turn on the ice cream maker, pour the lemon mixture into the freezer bowl through the ingredients spout and stir until
thickened, about 30 - 40 minutes.
When peeling a lemon or lime, use a peeler to remove the colored portion of the citrus peel.

CHANGES:
Pink grapefruit sorbet: 120g of pink grapefruit juice instead of lemon juice and ½ tablespoon of chopped grapefruit
peel instead of lemon peel. Add 60 g of almond syrup to the mixture.
Fresh mango sorbet: replace lemon juice with 120 g of fresh mango juice and ½ tablespoon of finely chopped mango
zest with lemon zest.
FRESH STRAWBERRY SORBET
Ingredients for 10 cups:
240 grams of granulated sugar
240 gr of pure water
60 gr of corn syrup
250 gr of fresh strawberries
½ tablespoon of fresh lemon juice or lime juice
Mix the water and granulated sugar in a medium container and bring to a boil.
