SLICED GRILLED SWORDFISH
Ingredients (for 6 persones) :
2 swordfish scallops (about 700 gr)
700 gr tomatoes
Fresh garlic
Oregano
Black olives
Basil
Olive oil
Salt
Whole pepper
Flavoured swordfish with oil, oregano, salt and pepper and make it cooked on the grill pre-
viously heated (about 5 minutes on each side).
Slice tomatoes and make it cooked briefly into the pan over brisk heat with a little hot oil, ten
or so black olives, salt, pepper, basil (as much as you like) and some cloves of garlic. Turn off
heat after few minutes.
Remove the fish from the grill and slice it. Serve the fish with a dash of olive oil and cooked
tomatoes.
