Preparation
Chicken Whole (3-4 pounds tied
Marinate or brush with oil and season.
Tuck wings under and tie drumsticks together.
Tie another string around the bird at the
wings. Load on spit and position spit on grill.
Place basting pan directly under the chicken.
Prime Rib Roast /Rib-eye Roast (3-4 pounds, tied)
Rub roast with spice rub or plenty of salt
and pepper. Load on spit and position spit
on grill. Place basting pan directly under
the roast.

Grill on MEDIUM, uncovered, turning frequently until lightly
browned and softened.
Grill on MEDIUM/HIGH, uncovered. Lay oiled side of crust directly
on grates.
Grill 2-3 minutes, rotate 90° after one minute. Turn. Sprinkle with
cheese and add toppings of your choice. Continue cooking 5-6
minutes, rotate several times.
Grill on MEDIUM, uncovered. Lay filled tortillas directly on grates. Cook
2-3 minutes per side until golden brown, rotate 90° after one minute to
ensure even browning.

Techniques and Cooking Time*
Rotisserie on HIGH, covered, for 75-80 minutes or until thermometer
reads 180°.
Rotisserie on HIGH, covered, for first 15 minutes. Reduce heat to
MEDIUM/HIGH and continue cooking covered for 50-60 minutes
or until desired doneness. Remove from grill and allow to stand for
10-15 minutes.
