y All plates from the "Modulo" range must be used with the 875000 base (Except 875030).

y Hot plates
- 875001: hot plate with glassware top.
- 875002: hot plate with stainless steel top.
- 875003: hot plate for carving.
- 875005: GN1/1 table-top bain-marie with lid.
- 875006: table-top bain-marie with two tureens.
- 875007 : table-top bain-marie with roll'top lid.
- 875030 : flush-fit double boiler with two soup tureens.
These plates enable food to be kept warm at 63 °C on buffets, when serving, when setting plates and for carving when using
product number 875003.
They cannot be used to reheat again or cook food.
y Cold plate :
- 875004: cold plate with glassware top.
It helps keep food which has already cooled down under 3 °C (directly on the plate or on a dish). The dish used must have been
cooled too. Food can be kept cold under 10 °C for 2 hours.
y Those cold plates are suitable for plates, 1/1 gastronorm containers and multiples below 40 mm, baking trays, dishes, etc.

y Dimensions of the openings for flush-fitting the double boiler with two soup tureens 875030:
- Tank: 310 x 515 mm.
- Control box: 122 x 133 mm. The box is mounted with two 6 mm diameter screws not provided.
- Maximum control box offset in relation to the tank: 800 mm.
ELECTRICAL CONNECTION
y Cable with connecting plug supplied with the device, 1 mm2 cross-section, 2 phases + ground.
y 230 V voltage, 50/60 Hz single-phase.
y The device must be connected to a 10/16 Amp singe-phased socket with ground and will be connected to a high sensitivity
differential device and protected against overcurrent.
y It cannot be connected without a single-phase plug. We shall not be held liable for any modification.
OPERATION
y 875001 / 875002 / 875003 hot plates :
- Install the plate on the 875000 support.
- Connect the plug 2P + G.
- Allow 20 minutes' pre-heating before use.
y 875005 / 875006 / 875007 table-top bain-marie and built-in 875030 :
- Install the bain-marie on the 875000 base.
- Fill up the tank with hot water (from 65° to 75 °C): comply with level (marking inside on long side):
* * GN1/1 bain-marie with lid :
- Upper mark in order to use it with a 65 mm (maximum) gastronorm container.
- Lower mark in order to use it with a maximum 100 mm deep container.
* * Bain-marie with tureens : lower mark.
- Connect the plug 2P + G.
- Allow 30 minutes pre-heating before use.
- When in use, top up with water every two hours.
- When not in use, keep the lid closed, so that the food does not dry out or cool too much.

y 875004 cold plate
- The eutectic plate must be put in a freezer beforehand at a -15 °C temperature maximum for 24 hours. Preferably lay the
plate flat in the freezer.
- Set the plate on the 875000 base.
- Remove the glassware top and put the frozen eutectic plate in its housing.
- Put the glassware top back on and allow to cool 30 min before use.
