Aroma's Favorite BBQ Chicken
Ingredients

chicken breasts

butter or margarine

lemon juice

garlic salt

cumin

cayenne pepper
1 teaspoon

½ teaspoon
pepper
Ingredients

skinless chicen breast, about 4½ oz. each
¼ cup
chopped white onion
¼ cup
chopped fresh rosemary
1 tablespoons
sun dried tomato chips (in ¼inch pieces)
1 teaspoons
grated fresh lemon peel
½ teaspoons
cornstarch
½ teaspoons
pepper and salt
4 tablespoons

For additional 6-Quart Grillet
Set the 6-Quart Grillet
juice, garlic salt, cumin and cayenne pepper to the pot. Pour ½ of this marinade into a
large bowl. Pierce the chicken in several places and sprinkle with salt and pepper. Place
the chicken in the bowl with the marinade, turning occasionally to coat the chicken.
Turn the 6-Quart Grillet
with the reserved marinade. Grill, turning and basting the chicken with the marinade
occasionally, until the chicken is thoroughly cooked (about 15 minutes).
To prepare the marinade for chicken breasts: Combine grated lemon, Canola oil, onion,
rosemary, sun dried tomato and salt in a medium bowl. Marinate chicken breasts in the
bowl and rub the chicken with the mixture. Place the bowl in the refrigerator for about 30
minutes.
Heat grill to 375º F degrees (190ºC). Take the marinated chicken from the refrigerator,
rub the chicken with cornstarch. Lightly oil the grill surface with cooking spray. Reserve
the marinade mixture. Grill the chicken for about 10-12 minutes on one side. Brush with
the reserved marinade when desired. Sprinkle the chicken breast with pepper. Chicken is
done when meat is pierced with a fork and juices run clear. Serve with hot pasta.
