OPERATING INSTRUCTIONS
1.
TEMPERATURE CONTROL
Your Wells warmer is equipped with a temperature control switch for each drawer cavity.
Each drawer may be individually controlled. The temperature range is OFF (O), with control
between 30ºC and 110ºC.
2.
INDICATOR LAMP
The lamp glows if the temperature control of the drawer is ON (I). It is also a reminder for the
operator to turn the control OFF (O) if the drawer is not in use.
3.
AIR FLOW REGULATOR
Air can circulate through the adjustable opening for control of moisture. For maximum ventilation
push the regulator knob to the right. For the least possible ventilation, push the button to the left.
4.
STAINLESS STEEL PRODUCT PANS
Heated foods may be placed directly in the stainless steel pan provided.
Fractional size pans and other containers may be placed in the main pan.

OPERATING SUGGESTIONS

1.
The adjustable air flow regulator controls moisture within the drawer cavity:
Slide the knob to the right (CLOSED) for moist operation. This position is used for breads, soft
rolls, fish and vegetables.
Slide the knob to the left (OPEN) for dry operation. Use this position for meats, hard rolls, taco
shells and corn chips.
2.
Optional Humiditrol rack for increased humidity during moist operation:
Maintain 10 mm of water in the main pan.
Install the Humiditrol rack in the main pan.
Place fractional size pans and other containers on the Humiditrol rack.
