CERAMIC GLASS DOORS
- The counter is a very effective cooking regulator.
- The flame can be adjusted using the convenient knob located at the side of the lower counter: if tightened the
flame will become more intense; if loosened the oven will tend to burn the wood less and heat more slowly.
- The ceramic glass counter is resistant to 800°C.
- Pizza can also be cooked with the counter closed, monitoring the cooking in the light of the flame.
- Exceeding a temperature of 400°C in the cooking chamber is useless for cooking and can cause damage.
- If the fire is too high and comes out from the oven mouth, use the door to adjust the flame.
- Handle the oven doors carefully, the ceramic glass is
fragile.
- Do not touch the ceramic glass or metal parts of the
counter. Only open using the appropriate handles.
- Do not touch the sliding grill when the oven is in use
without suitable heat resistant gloves.

COOKING WITH DUETTINO

With a single flame it is possible to cook different foods in two ovens: more than one square metre of cooking
deck and 100 Kg of refractory stones. While the deck of the Flame Oven (lower part) heats up with the living flame,
the Brick Oven (upper part) is surrounded by the flames and is heated gradually.
BRICK OVEN (UPPER CHAMBER)
It reaches a temperature of 300°C. The 9 cm of refractory deck ensure food is cooked lightly, progressively and
gradually. Thanks to the sliding grill, several foods can be cooked at the same time or pre-cooked food can be
reheated. The hot air released from the stones triggers a natural convection of air that eliminates excess humidi-
ty. The ideal foods to cook in the Brick Oven are: bread, desserts, roasts or foods in oven dishes or earthenware.
FLAME OVEN (LOWER CHAMBER)
It reaches a temperature of 400°C. With 6
cm of refractory layers, it will cook a pizza
in just a few minutes. The food cooks next
to the living flame, taking on the aroma of
the wood. Flame and grill cooking produc-
es crispy and flavourful dishes. The ideal
foods to cook in the Flame Oven are: pizza,
focaccia, grilled or skewered food.
The Duettino oven is very simple to use, and becoming familiar with the two ovens will be a fun experience in
company. To ensure the right balance of temperature and therefore the insertion of different dishes in the two ov-
ens, we recommend using a vivid flame to begin with.
But to feed it gradually, reducing the flame little by little by adjusting the flame via the counter with the air knob.
