GENERAL INSTRUCTION
This instruction manual must be kept with the appliance
for future reference. These notices have been drawn up for
your safety and the safety of others.
Please read this manual carefully before installing and
using your appliance.
The appliance described in this manual has been built
to meet 2014/35/EU (Safety), 2014/30/EU (EMC), Re
1935/2004/EC, Re 2023/2006/EC directives; and UNI
EN 203..., UNI EN 437, EN 60335-1, EN60335-2-36 and
EN55014 standards. This appliance has been designed
exclusively for cooking food, any other use is considered
improper: be careful that no live animal, person or
"dangerous" objects are placed inside the oven. It should
only be used by qualified personnel in professional
kitchens. Materials in contact with foodstuffs are suitable
for
use. The unit must never be left unattended when it
is being used! The appliance should be checked once a year
by a qualified technician. Switch the appliance off in the
case of a failure or malfunction.
The appliance must be wired to the mains power
supply by qualified personnel.
The appliance must never be cleaned with direct
and/or powerful jets of water.
Before
performing
maintenance
or
cleaning,
disconnect the appliance from the mains power
supply.
Contact the After Sales Service for repairs or
maintenance.
The manufacturer shall not be held responsible and
the warranty is void in the case of damage caused by
negligence in following the operating and installation
instructions or by improper use. The warranty is void
in the case of connections which have been made in
a way which doesn't meet the current standards and
fire-fighting regulations.

INSTRUCTIONS FOR INSTALLER
The following instructions are written for a qualified fitter
to ensure that he performs installation, adjustment and
maintenance in the most correct manner and in compliance
with current regulations. Remove the packaging from the
appliance as well as the protective plastic sheet, and, if
necessary, remove traces of glue with a suitable solvent.
To dispose of the packaging, follow local directives (for
more details refer to the chapter "ECOLOGY AND THE
ENVIRONMENT".

U S E R M A N U A L
POSITIONING
The oven must be positioned on its support or on the
work surface. All models have adjustable feet. The side
and rear surfaces of the appliance must be accessible
in order to enable the appliance to be connected to the
electricity and water supplies and for normal maintenance.
The appliance can be installed alone or in line. Respect
a minimum distance of 80mm between the appliance and
any walls made of flammable material, partitions, kitchen
furniture or nearby equipment. The contact surfaces must
be covered with non-combustible heat insulating material.
The appliance, and especially the power lead, must not be
installed anywhere near heat sources and the temperature
of the place in which the appliance is installed must not
rise above 50°C.
ELECTRICAL CONNECTION
The appliance must be wired to the mains power supply in
compliance with current regulations.
Before carrying out the wiring, make sure that:
a.
the voltage corresponds to the voltage specified
on the rating plate affixed to the rear panel of the
appliance and indicated in this manual
b.
the supply system has been effectively earthed in
compliance with current regulations.
c.
if there is a direct connection to the line there is an
automatic circuit breaker of appropriate capacity
upstream of the appliance that has a contact
opening that is greater than 3mm2.
When the appliance is operating the supply voltage must
not deviate from nominal voltage by ± 10 %.
NOMINAL VOLTAGE = 230 VAC 50 Hz
The appliance has an equipotential terminal to ensure
equal power compared to adjacent appliances, if any. The
terminal is marked by the symbol
.
Attention: Do not connect the earth conductor to
this terminal.
CONNECTING THE POWER CABLE
The appliance is supplied with a power cable (3x1.5
H07RN-F). The appliance must be connected to the
network by means of a standardized plug on a 16 A socket;
the plug socket must be in a clearly visible position and
must be easily accessible so that it can be disconnected
from the power supply. If a fixed installation is used, as
previously said, the cable must be connected to a circuit
breaker that is appropriate to the load (16A) and the
minimum distance between the contacts must be ≥
than 3 mm.; remember that the yellow-green conductor
(earth conductor) must never be disconnected. The power
cable must not be installed near heat sources and the
temperature of the place in which the appliance is installed
must not rise above 50°C.
CONNECTING TO THE WATER SUPPLY - WATER INLET
Ovens with steam system must be connected to the
drinkable water supply via the solenoid valve located
on the rear part of the appliance, always interposing
a stopcock with a pressure reducer set at 1.5 bar and with
a cartridge filter. The oven must always be connected to

a cold water supply that is transformed into steam inside
the heated oven. The supplied water must be drinkable
water and must meet the following conditions:
temperature between 15° and 25° C
total hardness comprised between 4° and 8° French
degrees.
A water softener should always be installed upstream of
the appliance in order to maintain the hardness of the
water within the above values. If the oven is operated at
higher levels of hardness scale will form on the walls of
the cooking chamber. Any request for technical assistance
to repair damage caused by scale are not covered by the
warranty. Regulations in some countries require a check
valve to be fitted at the mains supply inlet.
CONNECTING TO WATER SUPPLY – WATER DRAINAGE
The ovens have a water drain pipe located at the back of
the appliance. The connection to the water supply must
be made directly to the end of the stainless steel drainage
pipe. The drainage system must consist of stiff pipes and
withstand temperatures above 100 °C. If pipes are supplied
with the appliance they must be used. The diameter of the
drainage pipes must not be reduced and/or constricted
under any circumstances and the end of the pipe must
lead into a collecting funnel connected to a direct drainage
siphon. If the drainage pipe becomes clogged steam may
escape from the door and unpleasant smells may enter the
cooking chamber.
SAFETY DEVICES
Attention: the doors of all models are provided with
a micro switch that stops operations when the door
is open.
INSTRUCTIONS FOR USER
NOTICE
The appliance must not be used by persons, including
children, with reduced physical, mental and sensory
capacity and with inadequate experience or knowledge
of basic safety regulations. The appliances must be placed
in suitable environments and under supervision. The
appliance must be kept out of the reach of children.
No more than a total of 4 kg of food may be cooked in the
oven divided into the required cooking pans.
COOKING PROGRAMMER – TIMER
This enables the appliance to be started up. The maximum
programmable time is 120'. Turn the dial 6 to set the desired
cooking time; from this moment the timer is operating.
When cooking comes to an end the oven switches off
automatically and an alarm sounds. The appliance can also
be used without selecting cooking time. It is sufficient to
rotate the dial 6 to the manual position.
COOKING CHAMBER DEFROSTING/COOLING FUNCTION
ELECTRIC STEAM OVEN/ELECTRIC MULTIFUNCTION OVEN
Start the oven by rotating the dial 6 (timer) to the manual
position. Select the position 1l with the dial 1 to start the
cooking chamber fan.

START-UP OF THE APPLIANCE
ELECTRIC STEAM OVEN / ELECTRIC MULTIFUNCTION OVEN
To start, turn the dial 6 (timer) to the manual/undefined
position or set cooking time. Use the dial 1 to select
a function between 1a and 1l according to required
cooking method and turn the dial 4 (oven thermostat)
to the desired position. For steam cooking, the dial 4
(oven thermostat) must be positioned at a temperature
between 100° and 120°. For other steam and/or humidity
requirements, set the dial 3 accordingly. The quantity of
steam in the chamber is constant due to a preset quantity
of water. To operate the oven without steam being
supplied, leave the dial 3 at "0".

MAINTENANCE AND CLEANING

Warning: disconnect the appliance from the electric
power supply before performing any task!
GENERAL CLEANING
Perform cleaning only when the oven is cold. Keeping the
appliance clean is very important for a long and trouble-
free working life. The removable parts should be washed
separately with warm water and detergent, then rinsed in
running water. The steel parts may be cleaned with a damp
cloth and with a non-abrasive detergent and then dried
by using a soft, dry cloth. For very resistant stains, use hot
water and vinegar. Do not use products containing chlorine
to clean steel (sodium hypochlorite, hydrochloric acid, etc)
even if they are diluted, and do not rinse with direct jets.
Do not use harsh or abrasive detergents to clean stainless
steel parts. Iron cleaning pads should not be used as they
cause the formation of rust. For the same reason, avoid
contact with ferrous materials. When cleaning, avoid using
abrasive paper or cloth; we recommend using sponges to
remove hard stains. You can also use common sprays for
cleaning ovens and grills, following their manufacturer's
instructions. Clean the glass door of the oven with hot
water and do not use coarse cloths. It is important to clean
the oven each time you use it; in this way it will be easier
to remove cooking remains and to avoid burning them the
next time the oven is used, which would also result in a bad
smell. To minimise the emission of polluting substances in
the environment, we suggest cleaning the appliance with
products that are at least 90% biodegradable.
CLEANING INSIDE THE OVEN
The inside of the oven should be cleaned at the end of each
day's work. In this way it will be easier to remove cooking
remains, and also to prevent them burning the next time the
oven is used. Turn the electric power off or make sure you
have turned the burner of the oven off before doing any
work on it. Let the oven cool down and clean it thoroughly
with a damp cloth and warm water using a non-abrasive
detergent (or with the special products commonly available
for cleaning ovens). Do not use abrasive cloths or pads or
other products that could irreparably damage the stainless
steel. Normal cooking temperatures help transform grease
and oil splashes into a mist of residual dust that can be
easily removed at the end of the cooking process, when the
oven has cooled down, by simply using a damp sponge. We
recommend heating the oven periodically to the maximum
temperature so that the residual dust can be removed
