6.2 Cooling correctly
If the loaded goods are not previously chilled, then cool-
ing takes a considerable amount of time. The refrigera-
tion system is also a dehumidifier. The extracted water
tends to freeze on the walls of the evaporator, reducing
the capacity of the system. This ice must be removed
regularly in order to achieve the functional capacity of
the system. This defrosting process can be started manu-
ally whenever the formation of excess ice is identified.
6.3 Storing fresh produce
The best option for avoiding a spoilage of produce is to
use low storage temperatures. Storage at the tempera-
tures specified in the following table ensures that the
produce retains its original, fresh condition (taste, colour,
vitamin content, nutritional values):
