Green Pepper Homestyle Pork Chops
Serves 3
•
3 pork chops, 1/2-in., thin cut, bone-in
•
2 - 3 eggs
•
3 green onions
•
1/2 cup seasoned breadcrumbs
•
2 teaspoons cornstarch
•
olive oil spray
Pepper Topping
•
1/2- 1 jalapeño pepper, seeds, stem removed, minced
•
1 poblano pepper, seeds, stem removed, julienned
•
1 Cubanelle pepper, seeds, stem removed, julienned
•
1 teaspoon seasoned salt
1.
Whisk eggs in a flat bowl.
2. Chop green onions and mix well into a plate with breadcrumbs and cornstarch.
3. Using tongs or a fork, swirl pork chops, top and bottom, in the eggs.
4. Add each pork chop to the breadcrumbs, pushing the chop down into the breadcrumb
mixture to coat well. Place breaded pork chops into the refrigerator to set, while preparing
pepper topping.
5. Clean peppers, julienne (cut into very thin strips). Add all peppers to a small bowl and mix
well.
6. Place all pork chops into the basket. Add peppers to the center and lightly scatter the
remainder over the chops. Spray lightly with oil.
7.
Set Air Convection Fryer to 360ºF and air fry for 6 minutes. Turn chops over and stir peppers
halfway through air fry time.
8. Increase heat to 400ºF and air fry for 3 minutes.
9. Allow food to rest for 10 minutes before serving.

EZ Leftover Quesadillas
OMG. These cheesy, crunchy tortillas handily transform any leftovers into scrumptious, quick, and
healthy snacks or meals that everyone will love! Grab and go, enjoy on the road or at your desk.
Serves 1 to 2
•
2 (4-in.) or 1 (8-in.) flour, corn, or your favorite tortillas
•
3 - 6 tablespoons shredded cheddar/jack cheese, or any cheese of your choice
•
2 - 4 tablespoons leftover meat
•
2 - 3 tablespoons salsa or picante sauce, red or green, your favorite
•
olive oil spray
1.
Place 2 (4-in.) or 1 (8-in.) flour, corn, or your favorite tortillas onto a clean working surface.
Top tortillas with cheese. Add salsa, meat of choice, veggies of choice, and then a generous
handful of grated cheese.
IMPORTANT! To avoid cheesy messes and difficult cleanup, keep cheese in the center. Do
not add cheese to the edge of the tortilla.
2. Add the second tortilla to the top. Use your palm to press the quesadilla firmly together
before adding it to the frying basket. Spray the outside with olive oil spray.
3. Set Air Convection Fryer to 400ºF for 6 minutes. Flip quesadilla(s) at half time.
4. Remove quesadilla(s) to a plate. Serve with rice and refried beans.
