Banana Sour Cream Waffles
1 cup (250 ml) flour
1/2 teaspoon (2.5 ml) baking powder
1/4 teaspoon (1.3 ml) baking soda
1/4 teaspoon (1.3 ml) salt
1 egg, separated
In a large bowl, whisk together flour, baking powder, baking soda,
and salt; set aside. In a small bowl, beat the egg white with a whisk
until light peaks form. Add egg yolk, sour cream, milk, butter, and
banana to the flour mixture and mix well. Fold in the whipped egg
white. Pour 2/3 to 3/4 cup (160 to 180 ml) of batter into the waffle
maker. Cook 6 to 7 minutes or until golden brown. Makes 4 to 6
waffles.
Cinnamon-Raisin Waffles
1 cup (250 ml) flour
2 tablespoons (30 ml) brown sugar,
packed
2 teaspoons (10 ml) baking powder
1/4 teaspoon (1.3 ml) salt

In a small bowl, whisk together the flour, sugar, baking powder, salt,
and cinnamon. In a large bowl, whisk together the egg, milk, and oil.
Add the flour mixture to the milk mixture. Stir until the batter is just
combined. Stir in the raisins. Pour about 2/3 to 3/4 cup (160 to
180 ml) of batter onto the waffle maker. Cook 6 to 8 minutes or
until golden brown. Makes 4 to 6 waffles.

Crispy Ginger Ale Waffles
2 cups (500 ml) baking mix (for example, Bisquick)

Whisk together baking mix, oil, and ginger ale. Let sit 5 minutes. Pour
3/4 cup (180 ml) into waffle maker. Bake 6 minutes. Makes 4 waffles.
Chocolate Dessert Waffles
1/4 cup (60 ml) vegetable shortening
1/2 cup (125 ml) sugar
1 egg
1/2 teaspoon (2.5 ml) vanilla
2/3 cup (160 ml) flour
3 tablespoons (45 ml) unsweetened
baking cocoa
In a small mixing bowl, cream shortening and sugar until well blended.
Add egg and vanilla; blend until smooth. Add remaining ingredients
and mix until well blended. Batter will be thicker than normal waffle
batter. Spray grids with nonstick cooking spray. Place 2/3 to 3/4 cup
(160 to 180 ml) of batter into the middle of the waffle maker. Close lid
and cook 6 to 7 minutes. Remove and serve topped with vanilla ice
cream. Makes 3 to 4 waffles.
