TIPS FOR USING OIL
Choosing the oil
•
Use high quality oils for best results.
•
For most suitable oils the smoke point will be approx. 200 °C.
•
Remove food particles or sediment from oil to prevent darkening and foaming.
Health advisory
•
Some deep fry oils, such as solid fat or shortenings, contain trans-fat which can cause increased incidence of coronary heart disease and
other deleterious health effects.
Suitable:
tempered oils and fats, pure corn oil, soybean, sunflower oil.
CAUTION! Danger of fire!
All frying oils are flammable, and fires may be caused by frying at too high temperature. Attempts to extinguish an oil fire with
water causes the water to flash into steam due to the high heat of the oil, in turn sending the burning oil in all directions and
thus aggravating the fire. Instead, oil fires must be extinguished by smothering, for example by putting a lid over the fire. Other
means of extinguishing an oil fire include dry powder (e.g. baking soda) or fire fighting foam.
Filtering
•
Always allow oil to cool before filtering.
•
Always remove the food particles once the oil has cooled.
•
Filter cool oil after every use and before storage to remove food particles.
•
Filter cool oil with a cooking oil filter or fine-mesh strainer. You can also use a paper towel or a piece of cotton fabric as a filter.
Changing the oil
•
Change oil regularly with high quality oil to maintain optimum taste.
•
If oil is properly filtered it may provide good results even after multiple uses.
•
Oil that is used to fry food that is heavily breaded, battered or watery will need to be changed more often.
•
Never add new oil to used oil. This will lead to foaming and splattering.
Change oil due to the following reasons:
•
Smoke or strong foaming while frying.
•
Rancid smell and visibly darkened colour.
Using solid fat
•
When using solid fat (e.g. solid vegetable oil or shortening), cut it into pieces and allow it to slowly melt at a moderate heat in a pot or a frying
pan.
•
Carefully pour the melted fat into the oil reservoir (11).
