PYROMETER AND LASER THERMOMETER
- The pyrometer detects the temperature at a point inside the oven. The value detected by the pyrometer is
therefore indicative. With experience it will be easy to better assess when the oven is ready for various types of
cooking. You will acquire, therefore, complete control of the oven and you will become very adept at choosing
the cooking temperature. Alfa Pro offers the Laser Thermometer (not provided with the oven) please visit ours
website.
OVEN DOOR
- If the fire is too high and comes out from the oven mouth,
use the door to adjust the flame.
WARNING This oven has not been tested for use with doors.
To reduce the risk of fire or injury, do not install doors.
COOKING
The Opera oven is distinguished by how quickly it reaches the cooking temperature, in fact, it is possible to bake
the first pizza just 40 minutes after lighting it, with an average wood consumption rate of 9 kg/h.
If you need to bake pizza and other foods in close succession, we recommend running a medium fire that can be
fed according to need. For example, 40 minutes after lighting the oven it is possible to bake the first pizza, then
spread the embers over the refractory floor to grill meat, fish or vegetables.
It is also possible to keep food warm by placing it near the opening of the oven.
MAINTENANCE
- Creosote - Formation and need for removal. When wood is burned slowly, it produces tar and other organic
vapors that combine with expelled moisture to form creosote. The creosote vapors condense in a relatively cool
oven flue and exhaust hood of a slow burning fire. As a result, creosote residue accumulates on the flue lining
and exhaust hood. When ignited, this creosote makes an extremely hot fire.
- The oven flue should be inspected at least twice a year to determine when creosote buildup has occurred.
- When creosote has accumulated, it should be removed to reduce risk of fire.
- For proper maintenance of the oven, make sure before you turn it on that the chimney flue is free from any ob-
jects and that ash from previous cooking has been removed.
- Remove the embers when the ash has extinguished.
- The oven can be used all year round; in the winter, heat the oven with a smaller fire to avoid thermal shock due
to the humidity.
