When using milk made from water and milk powder, follow the manufacturer's
instructions: Usually this is to mix 250 ml milk powder and 750 ml water.
Yoghurt can only be made from soya milk or milk produced from milk
powder if the milk is colder than 40°C.
The fermentation time depends on the ambient temperature and the
temperature of the initial material. If the ambient temperature is low or
you are using chilled milk for the process, you should extend the pro-
cessing time. However, the processing time should not exceed 14 hours.
If you use plain yoghurt as a fermentation source, it should not exceed
10 hours.
Tip:
The active lactobacillus ferment is recommended as the fermentation source. Plain
yoghurt is a cheap alternative.

Ingredients
240 ml milk
180 g chocolate
(grated)
360 g low-fat vanil-

50 g granulated

1000 ml chilled fresh milk

1000 ml UHT milk
Ferment or 50 ml chilled plain yoghurt
1000 ml milk made from milk powder and water
Ferment or 50 ml chilled plain yoghurt
1000 ml boiled soya milk
Ferment or 50 ml chilled plain yoghurt.
Preparation
Mix all the ingredients together in a
mixer until everything combines to
make a smooth mixture.
Switch on the ice-cream maker and
pour the finished mixture into the ice-
cream maker.Set a processing time of
50–60 minutes.
