2. PREPARING FOOD
2.1 Capacity
Never fill the cooker to more than 2/3 of its capacity.
The minimum amount of liquid necessary so that the
cooker achieves pressure is 1/4 litre.
When cooking pulses and frothy vegetables, never fill
the pressure cooker more than 1/3 of its capacity to
avoid the possible obstruction of the safety valve.
We recommend that you start with heat at a maximum
so that the cooker reaches the correct pressure as
quickly as possible.
If you cook with gas the flame must be regulated so that
it does not exceed the diameter of the base of the
pressure cooker.
If you cook with electricity, glass ceramic cooktops or
induction stoves, the ring should be slightly smaller than
the diameter of the pressure cooker.
2.2 Cooking each product
As we have explained previously, we recommend that
you start with the heat (gas, glass ceramic cooktops or
induction stoves or electricity) turned up to its highest so
that the pressure cooker reaches the desired pressure
as quickly as possible.
After a few minutes, you will see that steam comes out
from the pressure control valve, it means the pressure
has arrived to the correct level. At this time, it is important
to turn the heat down to the minimum so that the pressure
remains stable inside the pressure cooker. From this
moment the cooking time begins.
2.3 Opening the pressure cooker once cooking
has finished
First of all, turn off the hobs. After that, you can proceed t
remove the pressure cooker control valve using a cold ra
or silicone mitt in order to release the inside pressure. On
the pressure control valve is removed, a big quantity o
steam will be released. The quantity of steam will decreas
gradually as the pressure in the inside goes down. In ord
to decrease the pressure quicker, the pressure cooker ca
be cooled by placing the lid briefly under the cold ta
(When the seal is worn a quicker and stronger decompre
sion may occur; this system then requires greater care).
Only when there is no pressure left in the pressure cook
may it be opened in the way described previously
Opening this cooker when there is pressure in the inter
may cause damage.
