The cooking time will restart from the suspen-
ded time.
The cooking cycle is resumed by pressing the
START/STOP key again maintaining the set pa-
rameters (possibly changed).
At the end of the cooking cycle:
The bell rings for 10 seconds or until the oven
door is opened and the oven is put in the OFF
status.
Opening the door during the operation of the
oven is equivalent to pressing the stop key, but,
when the door is closed again, the oven resumes
its operation automatically.
TEMPERATURE KNOB
Adjustable from 0 °C to 270 °C
Temperature default value: 100 °C
During a cooking cycle the set values can be
changed by turning the temperature knob; at
this point the display fl ashes and the value set-
ting operation is repeated.
COOKING TIME KNOB
Adjustable from 0.00 to 9.59
default value: 000
Selects the cooking time value in hours and mi-
nutes.
By increasing the time above 9.59 you enter the
infi nite cooking mode and the display shows
INF.
At this stage the oven works for an infi nite
time.
Conversely, by decreasing the time from the in-
fi nite cooking mode you return to the minimum
time.
PREHEATING
By turning the knob anticlockwise below 0.00
you activate the preheating function.
Instead of the time the display shows the mes-
sage "PRE".
When you start the cooking by pressing the
START key the oven begins to work and once
the set temperature
is reached, the oven bell rings until the door is
opened, the values are zeroed and the user is
back at the initial stage of value setting.
Turning the knob clockwise the value on the
display turns to 000, the preheating function is
disabled.
HUMIDIFICATION / DRYING KNOB
Adjustable from 0 to 100
Default 00
The display fl ashes the default value 0, turning
the knob you set the value.
Turning the knob you turn on the humidifi cation
LED, and you set the desired humidifi cation per-
centage.
Turning the knob in the opposite direction once
the value on the display is brought back to 0 the
drying LED turns on and the desired percentage
of oven chimney opening is set.
The higher the percentage, the more the chim-
ney stays open (100% total opening of the chim-
ney).
HUMIDIFICATION KNOB
(only for the 523A model)
The display fl ashes the default value 0, turning
the knob you set the value. During a cooking
cycle the set values can be changed by turning
the knob at this point the display fl ashes and va-
lue setting is repeated.
CORE PROBE TEMPERATURE KEY
Pressing the core probe key:
the red LED is turned on and stays on. The time
display changes from three digits to two digits
(00).
Set adjustable from 0 °C a 99 °C.
Default 0 °C.
The timed cooking function is excluded and the
relevant
display shows three dashes (- - -).
Turning the core probe knob clockwise the set
point is set.
When the oven starts the time display shows
the time passed from the beginning of the co-
oking cycle.
When the core probe set point is reached the
oven behaves as in the time mode when the ti-
mer reaches 0.
MULTI-SPEED KEY
To select the speed of the motor press the mul-
ti-speed key, the time display shows the speed
steps.
The time display fl ashes and if the knob is not
moved after 10 seconds it returns to showing
the time parameter.
When the speed values are changed the maxi-
mum temperature is also checked.
If the limit is exceeded, the system automatical-
ly sets the temperature to the maximum thre-
shold and the temperature display fl ashes and
the buzzer rings for 1 second.
The speed of the motor can be changed only if
the oven is ON or on STOP, during the cooking
the speed cannot be changed.
By setting the speed to 1 the oven will start
at the maximum speed until it reaches the set
temperature.
The speeds are:
1 = 2100/1800 rpm
maximum temperature 220 °C
2 = MAX 2800 rpm
maximum temperature 270 °C
3.5 - Operations after the use
1) Turn the oven off .
2) Turn the water supply faucets off .
Disconnect the power supply general
switch.
3.6 - Cleaning and maintenance of the
oven
• The oven must be cleaned daily in order to
guarantee their best operation, hygiene and
effi ciency.
In case of fault, do not attempt to solve the pro-
blem. Please contact the technical service cen-
ter that will take care of resolving the faults.
Do not try to disassemble the machine, all in-
terventions must be carried out by specialized
personnel.
For ordinary cleaning, perform the following
operations observing the instructions:
-before cleaning the oven, disconnect the
power supply, turn off the cold water faucet and
let the oven cool down;
-proceed with daily cleaning of the stainless ste-
el parts using lukewarm water and soap or ade-
quate detergents, rinsing carefully and drying
thoroughly; do not use detergents that contain
chlorine (bleach, hydrochloric acid etc.) and
avoid cleaning the stainless steel surfaces with
steel (wire) wool, brushes or scrapers that may
cause oxidation;
- Do not let foods be stagnant (most of all aci-
dic stuff such as salt, vinegar, lemon ...) on the
STAINLESS steel parts because they might be
damaged;
- Do not wash the machine on the outside with
direct water bursts because if the water goes in
it could limit the safety of the machine; only use
a wet cloth and then dry off the surfaces;
- do not use corrosive substances (for instance
muriatic acid) to clean the oven support coun-
ter that might accidentally damage the lower
parts of the machine.
- ask, at least once a year, for the intervention
of an authorized technician for a general in-
spection of the oven.
3.6.1 - Cleaning the cooking chamber
•
At the end of the day and with the tempera-
ture of the chamber not exceeding 50-60 °C
start cleaning as follows:
•
If necessary, remove the tray racks, being
cautious not to hit the light bulbs located on
the right-hand side of the cabinet, in order
to clean them separately.
•
Remove or open the tray racks and the fan
blade.
Close the door and, in order to let the deter-
gent react, wait for 15-20 minutes;
•
Rinse the inside of the cabinet with clean
water;
•
Start a cooking cycle at 150 °C in order to dry
off the cooking chamber.
3.6.2 - Cleaning the fan and the hea-
ting system
•
The heating system and the fan must be clea-
ned regularly in order to avoid accumulation of
dirt that in time becomes diffi cult to remove.
For this purpose proceed as follows:
•
remove the tray racks and the fan blade and
perform the operations indicated in the prece-
ding paragraph:
"Cleaning the cooking chamber".
•
Rinse the inside of the cabinet with clean wa-
ter;
•
Reassemble in order the fan blade and the tray
racks.
The producer declines all responsibility for fai-
lure to observe the safety and waste disposal
regulations in force in the countries where the
oven is used.
The producer reserves the right to modify all
that has been indicated above at any time.
