• The drain pipe must have an inclination of at least 3 cm for each meter of length (water
mode only).
• Connect the scoop wash tank drain pipe to a drain capable of guaranteeing regular
water outflow and equipped with an efficient anti-siphoning system.
• After having connected the water inlet and outlet pipes, with the machine stopped, open
the cut-off cock and make sure that water does not leak from the drain (water mode
only).
Now check the following:
1. Beater motor rotation direction (three-phase models only).
Power the machine, turn the main selector of every gourp on "AGITATION" (green
lights are off) and control that the beater rotates anticlockwise. If this is not the case,
exchange the phases in the plug. To connect the phases properly cut the power and
invert the two phase wires in the plug.
Use of the machine with incorrect beater motor rotation seriously damages general
performance and causes early wear of the scrapers.

• If needed, carry out an equipotential bonding,
using the screw placed on the rear of the machine
below the frame and marked with the symbol
shown to the left.
• Make sure that the cold water supply line intended
for condensation and for the wash system has
pressure values between 1 and 3 BAR (between
0.1 and 0.3 MPa) and temperature between 13°
and 20°C.
• Connect the machine to the water mains using
only the new pipes supplied, compliant with
standard IEC 61770; never use old or worn pipes.
Use suitable DIN 3017 hose clamps.
• Connect the cold water supply hose to the inlet
fitting of the machine, as shown on the picture of
page 8. Use a Ø1/2" fitting (air cooled units) or
Ø3/8" fitting (water cooling) and interpose a valve
gate stopcock to be positioned within reach of the
operator.
• Connect the water condensing exhaust hose to the
outlet fitting of the machine, as shown on
picture of page 8. Use a or Ø3/8" fitting (only water
cooled models).
