There are two basic methods of cooking with charcoal. The
direct method is for foods that require higher heat, and a
short cooking time. Food is placed directly over the hot coals.
The charcoal basket may be left in place underneath the
grate insert for direct cooking, or the charcoal can be spread
across the grate with food cooked directly above it.
NOTE: If you leave the charcoal basket in place while cooking
directly over hot coals, you will need fewer briquettes.
The indirect method is best suited to foods that require a
longer cooking time at lower temperatures to avoid drying out
or overcooking, or for more delicate meats and vegetables.
For the indirect method, food is placed along the outer
edges of the main grate. Leave charcoal basket in place for
indirect method.
Experience using the grill is the best way to determine your
own cooking preferences and decide which methods work
best with your recipes.
GRILLING:
Light the charcoal and allow it to become ready for
cooking. Remove the charcoal basket.
Replace the grate insert.
Place the food on clean grates and place the hood on
the grill. Cooking time will vary depending on personal
preference.
When food is done, carefully remove the food from the
grill using a long-handled grill utensil.
When finished cooking, replace the hood and allow the
charcoal and the grill to become cool before emptying
the ashes.

WARNING:
Only place the pizza stone in cold grill. Placing the pizza
stone in a hot grill can result in possible serious injury.
To use the pizza stone:
Using the insert removal tool, lift and remove the grate
insert, then load charcoal into charcoal basket and place
the pizza stone in the hole where the grate insert was
removed.
Light the charcoal as described earlier in this manual,
and close the hood. Allow approximately 15 minutes to
heat the stone to a cooking temperature.
Open the hood and carefully place pizza on the pizza
stone. Wear heat-resistant oven mitts and use a pizza
peel or other long-handled utensil to place pizza on pizza
stone.
Cook the pizza.
When finished cooking, carefully remove the pizza. Wear
heat-resistant oven mitts and use a pizza peel or other
long-handled utensil.
Replace the hood and allow the charcoal and the grill to
become cool before emptying the ashes.
Allow the pizza stone and grill to completely cool.
Clean grates and pizza stone.
