The installation, transformation and repair of appliances for professional kitchens as well as removal due to malfunction,
and the supply of gas, may be made only by means of a maintenance contract stipulated with an authorised sales office
and in observance of technical regulations.
The appliance can be installed by itself or in a series side by side with appliances produced by us. There must be a minimum
distance of at least 10 cm between the appliance and the sides of the nearby cabinets made of inflammable material. Take
suitable measures to guarantee thermal insulation of the inflammable sides, such as, for example, the installation of
protection against radiaton. The appliances must be installed in a suitable manner, observing the safety standards. The
small feet are adjustable to level the appliance.
GAS CONNECTION PIPE
The gas must be connected using steel or copper pipes, or with flexible steel pipes, in accordance with the laws of the country
where the appliance is installed.
Each appliance must be furnished with an easy-closure cutoff cock for the gas.
After installation, a check must be made for possible gas leaks from the fittings; do not use a flame for this purpose, but non-
corrosive substances, for example a solution of soapy water or a spray which makes any leaks evident.
All of our appliances undergo rigorous controls: the type of gas, the functioning pressure and the category to which it belongs
are indicated on the data plate.
CHECKING THE THERMAL POWER
Check if the thermal power is correct:
•
The thermal power is indicated on the data plate of the appliance;
•
First check whether the appliance is set up for the type of gas supplied, then ensure that the information on the data
plate corresponds to the gas to be used. When adapting to another type of gas, check that the characteristics of that
gas conform to the specifications given in this instruction manual.
The pressure is measured using a pressure gauge (smallest unit of measure 0.1 mbar) which is inserted in the appropriate
outlet (see figure 1 pos. 10). Remove the sealing screw and insert the tube of the pressure gauge. After measurement, replace
the screw, tighten it and check if it is watertight. (fig.1).
Connection for liquid gas G30/G31
The connection pressure for liquid gas is 28 mbar for butane, 37 mbar for propane.
Check the data plate, measure the pressure and see whether the description of the nozzle installed corresponds with the one
given by the manufacturer.
Connection with natural gas (methane) H G20
The connection pressure of natural gas is 20 mbar.
Check the data plate, measure the pressure and see whether the description of the nozzle installed corresponds with the one
supplied by the manufacturer.
CHECKING THE PRIMARY AIR OF THE MAIN BURNER
All the burners are equipped with an air regulator which allows variation of the primary air flow by means of an adjustable
bush which can be blocked in the desired position with a screw. Approximate values for parameter " x" (primary air) (see
photographs 3) are given in the Technical Specifications Table. The primary air flow must be regulated to prevent separation
of the flame from a burner when it is cold, or a flashback when it is hot.
