Set the ash pan on top of the cart, directly above the pig.

Place the charcoal grate directly above the ash pan.
If using charcoal chimney starter, follow all manufacturer's
warnings and instructions regarding the use of their product.
Start with 13 - 15 lbs. (5.9 kg. - 6.8 kg.) of charcoal. This should
be enough charcoal for the first
hour of cooking.

Carefully light charcoal chimney starter and allow to burn
until covered with a light ash (approximately 20 minutes).
When charcoal is burning strong, carefully place hot coals
evenly over the charcoal grate.

If using lighter fluid, follow all manufacturer's warnings and

Saturate charcoal with lighting fluid. Wait 2 to 3 minutes
to allow lighting fluid to soak into charcoal. Store charcoal
lighting fluid safely away from the Pig Roaster.

Stand back and carefully light charcoal and allow to burn
until covered with a light ash (approximately 20 minutes).
When charcoal is burning strong, carefully place hot coals
evenly over charcoal grate.
