hOW TO USE ThE hOT ZONE SEAR FUNCTION
This unique feature allows you to sear meats, fish, vegetables and fruits for up to 2
minutes at a high temperature and then automatically lowers the griddle temperature to
the original setting to continue cooking.
Note: The SEAR function can be used at any time during the cooking cycle.
Using SEAR at the beginning of the cooking cycle:
1. To begin preheating, set the desired temperature by
pressing the UP (▲) button on the temperature control
probe until the light to the right of the desired setting
begins to flash.
2. Press the SEAR button on the temperature control
probe to raise the temperature in the Hot Zone™ area
of the griddle to 520°F. The light next to SEAR on the
temperature control probe will begin flashing and the
E
orange light under the SEAR button will be illuminated (E).
3. When the Hot Zone™ area is fully heated, the light next to SEAR on the temperature
control probe will become constant. The Hot Zone™ area will hold that temperature
for approximately 2 minutes
Note: It is not necessary to wait for the griddle to heat to the preset temperature before
selecting SEAR.
4. Carefully place the food to be seared on the Hot Zone™ area. Sear food on each side
for about 1 minute.
5. After about 2 minutes, the temperature on the temperature control probe will change
to the preset temperature initially selected. (For example, if you select 350°F and then
SEAR, the griddle will return to 350°F after the searing function
is complete.)
Note: You can turn off SEAR by either pressing the Down (▼) button or by pressing the
desired temperature. The griddle will automatically revert to the preset temperature.
6. To continue cooking, move the food to the regular cooking area of the griddle.
7. If you have more food to sear, press the SEAR button again and follow steps 2 – 4.
Note: When using SEAR, watch foods that are on the rest of the griddle carefully; turn
often to maintain even cooking.
Using SEAR in the middle or at the end of the cooking cycle:
1. Follow steps 1 to 6 in the HOW TO USE on pages 5-6.
2. Press the SEAR button on the temperature control probe to raise the temperature
in the Hot Zone™ area to 520°F (see Illustration E). The light next to SEAR on the
temperature control probe will begin flashing and the orange light under the SEAR
button will be illuminated.
3. When the Hot Zone™ area is fully heated, the light next to SEAR on the temperature
control probe will become constant. It will hold that temperature for approximately
2 minutes.
4. Follow steps 4 to 7 in USING SEAR AT THE BEGINNING OF THE COOKING CYCLE.

• Be sure Hot Zone™ area is preheated before use to assure even searing.
• Meats, poultry, fish, and vegetables can be seared on the Hot Zone™ area and then
moved to regular cooking surface of the griddle to complete cooking.
• Use a meat thermometer when cooking meat and poultry to test for doneness.
• Remember to set the temperature setting to approximately 350°F on the regular
cooking surface of griddle before searing to allow for adequate cooking once meats
are seared.
• Foods – such as thinly sliced beef, shrimp and scallops – may only require another
3 to 5 minutes to complete cooking once they have been seared.
