Adjust the ame height to suit by turning the knob. The
outline ame symbol marks the lowest setting.
The generously sized cooking surface provides variable
cooking temperatures. The heat is regular, constant.
This means you can work with 3 or 4 pans at the same
time, without having to manipulate the knob.
We call this surface the "chef's piano".
Following are a few examples of how to use the
simmering plate:
Vegetables
Boil the salted water on one of the outer burners, add
your vegetables and then continue to cook on the
simmering plate;
Sauces and Creams
Whisk with your saucepan in the middle; when
thickening begins, move your saucepan to the edge,
while continuing to mix;
Meat
After frying and browning your pieces of lamb or veal
over a high ame you can then move them to the
plate to simmer and cook.
Contact between the simmering plate and your cooking
utensil is always uniform, ensuring a perfectly even
distribution of heat.
Cleaning your simmer plate
Things to avoid
The enamel nish of the simmer plate is very durable
– but is can be damaged by some cleaning materials.
Never use paint solvents, washing soda, caustic cleaners,
biological powders, bleach, chlorine based bleach
cleaners, coarse abrasives or salt. Don't mix di erent
cleaning products - they may react together with
hazardous results.
Acids can attack the nish. Any spills of vinegar (acetic
acid) or fruit juices (citric acid) etc. should be cleaned o
as soon as possible.
Do not use oven cleaning aerosols etc.
How to clean
Allow the simmer plate to cool completely before
cleaning.
Clean with caution. If a wet sponge or cloth is used to
wipe spills on a hot surface, be careful to avoid steam
burns. Some cleansers can produce noxious fumes if
applied to a hot surface.
Always clean the plate after use. It should only be
cleaned with a soft cloth wrung out in clean hot soapy
water - but take care that no surplus water seeps into the
appliance. Wipe with a clean dampened cloth then polish
with a dry cloth. For stubborn stains, a nylon washing up
brush and hot soapy water can be used.
For more through cleaning the plate can be taken o the
hob. Allow to cool completely before removing – take care
the plate is heavy. After cleaning dry and replace carefully
on the hotplate
NEVER USE CAUSTIC OR ABRASIVE CLEANERS AS THESE
WILL DAMAGE THE SURFACE.
