Note: Use this chart as a guide to deep frying times. Frying times may vary because
of food temperature, quantity and size of pieces. Best results are obtained when
food is cooked in small batches and size of pieces is uniform. When frying larger
amounts, keep in mind that the food must be completely covered with cooking oil/fat
after the frying basket has been lowered.
WARNING!
The deep fat frying basket must not be more than 2/3 FULL.
Making home-made French Fries
You will need: Potatoes, salt and freshly ground pepper.
TIP: Use vegetable or peanut oil for best results.
1.
Heat oil in the Deep Fryer to 340 °F.
2.
Cut the potatoes into uniform French Fry sticks (about 0.2 x 0.2 inch).
3.
Dry the potato sticks completely and thoroughly.
4.
Add the potato sticks into the basket and fry in small batches. Cook for approx.
3 minutes, remove and drain on layers of paper towels.
5.
Increase the oil temperature to 375 °F.
6.
Add the potato sticks to the basket and fry in small batches for a second time for
approx. 4 minutes.
7.
Once they are golden and crispy, remove the French Fries and drain on fresh
layers of paper towels.
8.
Season to taste and serve immediately.
