Machine cleaning

Cleaning must be carried out after every day
of use. Use hot water, a neutral detergent/
cleaner if necessary, and a soft brush or
sponge. If another type of detergent is used,
carefully follow the manufacturer's instructions
and observe the safety rules given in the
information sheets provided with the product
or substance.
In order to reduce the environmental impact
of pollutant substances, clean the appliance
(externally and internally where necessary)
with products that are more than 90%
biodegradable.

Daily internal cleaning

At the end of the day's work, proceed as follows
(fi g. 1, fi g. 3):
Switch off the cooling of the refrigerated
drawers "Y" by turning the thermostat knob
"Z" anticlockwise to "0";
Switch the appliance off by keeping the button
"S" pressed for about 2 seconds;
Remove the power plug from the main

Remove the grease trays "
of the inlet, immediately below the labyrinth
fi lters, gripping them by the special handle;
Filters and trays can be placed in a dishwasher
to remove all the grease;
Thoroughly dry the parts and components
just cleaned;
Refi t all the parts;
Empty the refrigerated drawers "
thoroughly with a damp cloth;
Dry thoroughly and leave the drawers half-
open to avoid the formation of unpleasant
odours.

Exterior cleaning

Remove the operator's equipment trays and
the respective supports "F".
Disconnect the cooking modules and clean
them, carefully following the instructions
provided with such equipment.
Clean the stainless steel surfaces with
lukewarm soapy water (do not use detergents
containing abrasive substances, steel wool,
brushes or scrapers in common steel) then
rinse with a wet cloth and dry thoroughly.
The trays containing condiments and the
respective supports "F" can be placed in a
dishwasher to remove all the grease.
Refi t all the parts.

Long idle periods

Whenever the machine is not going to be used
for a long period of time (e.g. one month), take
the following precautions:
Switch off the cooling of the refrigerated
drawers "Y" by turning the thermostat knob
"Z" anticlockwise to "0";
Switch the appliance off by keeping the button
"S" pressed for about 2 seconds;
Remove the power plug from the panel
where the machine is connected;
Clean the inside and outside of the machine
as described in par. "I5.1 Daily internal
cleaning" and "I5.2 Exterior cleaning";
Spread a fi lm of paraffi n oil over all the
surfaces.
When using the machine again, follow the
instructions given in par. "H2 Starting".
