(preheat for 5 minutes). Gas oven: Gas mark 2 - 3.

Chocolate cream, speed 5~6
Ingredients:
200 ml of sweet cream, 150 g of semi-bitter couverture chocolate, 3 eggs, 50 - 60
g of sugar, 1 pinch of salt, 1 sachet of vanilla sugar, 1 tablespoon of cognac or rum,
chocolate flakes.
Preparation:
Beat the cream in the mixer bowl with the whisk until it is firm. Remove it from the
bowl and leave it in a place where it can cool down. Melt the couverture chocolate
according to the packaging instructions or in a 600 W microwave for 3 minutes.
At the same time, beat the eggs, sugar, vanilla sugar, cognac or rum and salt in
the mixer bowl with the whisk at speed 3, until it forms a foam. Add the melted
chocolate and mix it evenly at speed 5 - 6. Set aside a little of the cream to decorate.
Add the remaining cream to the creamy mixture and mix it briefly using the pulse
function. Decorate the chocolate cream and serve it well chilled.

Initial use - General information
Raise the front protective housing (3a) of the spiral drive system and push the

switch (2) to the right.
Insert the spiral housing (10) into the spiral drive system, with the funnel facing

upwards and release the switch (2) until the housing is fitted in place.
Place the mincing tray onto the funnel, positioning the hole in the tray underneath it.

Insert the spiral into the horizontal part of the spiral housing until it is locked in

position. Refer to the "Using the meat mincer" section.

NOTE:
• Cut the meat into pieces of around 2.5 cm. Check that there are no bones or
tendons in the meat pieces.
First fit the blade on the end of the spiral, then insert one of the cutting plates.

Check that the cutting plate stops are correctly inserted in the grooves of the spiral
housing. Tighten the nut (14) until it is "hand-tightened".
Place the pieces of meat onto the tray (15) and into the funnel.

Place a container under the spiral housing outlet.

Check that the control dial (5) is at the off position (OFF/0).
4.
Plug the device into a secure 230V/50Hz mains supply.

Switch the appliance on by activating the control dial (5).

If necessary, push the meat with the presser (9). Never insert your fingers into the

funnel and never push the meat into the funnel with your fingers.
