USE OF THE MACHINE WITH TILTING HEAD AND REMOVABLE TANK
To lift the head and extract the tank, proceed as follows:
-
stop the machine, disconnect the plug; completely lift the guard
-
"I" (fig.10); unscrew pin "M" to unlock the head. Raise the head
-
through the piston below;
-
-
turn disc "0" clockwise to unlock the bowl; lift the bowl and remove it;
-
-
then remove the dough.
To reposition the cellar and block the head, proceed as follows: Once the
cleaning has been carried out:
-
reposition the humidor on the disc and make sure that the four studs are correctly fixed in the four "K" holes;

block the bowl by turning it in the opposite direction to disk "0" (fig.11); lower the
-
head and secure it with pin "M" (fig.9).

USEFUL TIPS FOR THE CORRECT USE OF THE KNEADING MACHINE
The best mixing result can be obtained with the following procedure:
1- Pour about 3/4 of the total water into the tank;
2- Set the timer to the desired working time and switch on the kneading machine. About 15/20 minutes in total;
3- Slowly add flour and baking powder;
4- Adjust the consistency of the paste by slowly adding the remaining water (1/4) while continuing to mix;
5- Let the machine work for a few minutes then add the salt; If necessary, add a thread of
6- olive oil while continuing to mix;
7- Let the kneading machine work until the set time has elapsed. Do not go beyond 20 minutes.
ATTENTION :
The kneading machine will not mix properly if the flour has been put in before pouring
the water. The dough will stick to the sides or the flour will stick to the bottom.
If you exceed 20 minutes, the paste will be too hot and its properties will be altered.
To obtain a good paste, it is necessary to control all the temperatures involved; the environment, the flour, the water
and the temperatures generated by the kneading machine during operation (approximately 10°C).
An optimum dough temperature ranges from +22°C to +26°C.
