Points in Conning
Pots that extend beyond !" of the surface
element's circle are not recommended for
most surface cooking. However,when
canning with water-bath or pressure
canner, larger-diameter pots maU be
used.This is because boiling water
temperatures (even under pressure) are
not harmful to the cooktop surfaces
surrounding the surface elements.
HOWEVER, D ONOT USELARGE-
DIAMETER CANNERS OROTHERLARGE-
DIAMETER POTSFORFRYING ORBOILING
FOODS OTHER THANWATER. M ost surup
or sauce mixtures-and all tupes of
fruing-cook at temperatures much
higher than boiling wate, Such
temperatures could eventuallu harm
the glass cooktop surfaces.

Be sure the cannerfits over the
center of the surface element. If uour
cooktop or its location does not allow
the canner to be centered on the
surface element, use smaller-diameter
pots for good canning results.

Flat-bottomed canners must be
used. Do not use canners with
flanged or rippled bottoms (often
found in enamelware) because theg
don't make enough contact with the
surface elements and take a long
time to boil wateE

When canning, use recipes and
procedures from reputable sources.
Reliable recipes and procedures are
available from the manufacturer of uour
canner; manufacturers of glass jars for
canning, such as Ball and Kerr brand;
and the United States Department
of Agriculture Extension Service.

Remember that canning is a process
that generates large amounts of
steam. To avoid burns from steam
or heat, be careful when canning.

canning may take longer than expected,

(2) starting with HOTtap water for fastest
heating of large quantities of water.

a gentle but steady boil must be
maintained for the required time. When
conning foods in o pressure conner, the
pressure must be maintained for the
required time.

it is very important to make sure the
prescribed boil or pressure levds ore
maintained for the required time.

the conning jars for the prescribed time,
with no interruption in processing time,
do not con on on_l cooktop surface
element if _lour conner is not flat.

Control Knobs
Thecontrol knobs moy be removed for
eosiercleoning,
Make sure the knobs are in the Off
positions and pull them straight off the
stems for cleaning.
The knobs can be cleaned in a dishwasher
or theg mag also be washed with soap and
wate_ Donot remove chrome accent skirt
(on some models).Hake sure the insidesof
the knobs are drg before replacing.
Replace the knobs in the Offposition to
ensure proper placement.
