ITALIAN ICE RECIPES
GAZPACHO ITALIAN ICE
2 cups spicy tomato juice
4 oz Egg Beaters, or egg
1 large peeled seeded chopped
substitute
fresh ripe tomato
2 TBL sugar
1 cup peeled seeded chopped
2 TBL olive oil
cucumber
2 TBL red wine vinegar
1/4 cup finely minced red onion
salt and pepper to taste
1/4 cup finely minced peeled
green or red pepper
Combine ingredients in a food processor or blender and pulse 5 or 6 times
to combine ingredients. Pour into the rotating freezer bowl.
Freezing time: 10-20 minutes
ESPRESSO ITALIAN ICE
3 TBL instant coffee granules
3/4 cup sugar
3% cups boiling water
1 tsp vanilla extract
Dissolve coffee in boiling water. Stir sugar into coffee until dissolved. Stir in
vanilla. Put in refrigerator to chill for 4 hours. Pour into the rotating freez
er bowl. Serve with a dollop of whipped cream and a sprinkle of cocoa.
Freezing time: 15-25 minutes
