OPERATING INSTRUCTIONS
COOKING TIP
Line the water bowl with aluminum foil before each use. This will make it easy to clean and help your
water bowl last longer.
To make adding water easier and safer, use a clean watering can with a long spout.
ADDiNG WATER
To add water before cooking, simply remove the water bowl and fill it with water slightly below the rim.
Place the bowl back into the smoker. If charcoal has been lit, use heat-resistant gloves when placing
the water bowl back into the smoker. Adding water before cooking is recommended. To add water
while cooking, if a sizzling sound indicating lack of water is heard, or there is a need to add water,
open the bottom door with care and avoid taking in the smoke. Use a long nose kettle-like water can,
stand as far from the smoker as you can, fill the water bowl up to 1 inch (2.5 cm) below the rim.
CAUTION: Water bowl will become hot when placed directly above lit charcoal. Always wear
heat-resistant gloves when handling the water bowl.
CAUTION: DO NOT pull the water bowl out beyond the rack when the smoker is hot.
ADDiNG WooD cHiPS
To add wood chips before cooking, wrap the desired amount of wood chips in aluminum foil and
place directly onto the charcoal. Poke holes on the top of the foil wrapping to allow smoke to escape.
Wood chips can also be placed directly onto the charcoal without aluminum foil. The amount and type
of wood you use is entirely dependent on the desired amount of flavor.
To add wood chips while cooking, follow the directions below.
WARNiNG: Use caution since flames can flare-up when fresh air suddenly comes in contact with fire.
When opening the door, keep hands, face and body a safe distance from hot steam and flame flare-ups.
Step 1
Stand back and carefully open smoker box door allowing heat and steam to escape away from your
face. Use caution since flames can flare-up when fresh air suddenly comes in contact with fire. In-
spect the charcoal level in pan.
Step 2
Wearing flame retardant oven mitts/gloves, stand back a safe distance and use long metal cooking
tongs to lightly brush aside ashes on hot coals. Use the long metal cooking to add charcoal and/or
wood to charcoal tray, being careful not to stir-up ashes and sparks
WARNiNG: Never add charcoal lighting fluid to hot or even warm coals as flashback may
occur causing severe burns.
Step 3
Close smoker box door and allow food to continue cooking.
Allow the ashes to completely cool before reusing or cleaning the smoker.
