The control panel is fitted with touch-screen technology: all that is
needed to give a command is to touch the corresponding key gently.
NOTE: The electronic instruments mean it is possible to make
adjustments to the oven with greater speed and precision but their
very nature means that they are more delicate than traditional
instruments.
Once the main switch 0/1 is switched on, both it and the graphic
display will light up. When switched on, the graphic display will first
show the initial screen for a few seconds, followed by the main menu
screen (fig.28), complete with the settings for the last baking operation
carried out:
A) Date & time
B) Actual set point temperature (small figures) for rear ceiling
C) Actual set point temperature (small figures) for front ceiling
D) Actual set point temperature (small figures) for rear floor
E) Actual set point temperature (small figures) for front floor
F) Indicates ceiling heating elements on/off

H) Indicates state of the Stand By function

Q) Icon to access the Extramenu
The control unit allows you to use the oven in "MANUAL" mode or to
use the "PROGRAMS" by recalling one of the baking programs stored
to memory.
3.2.1
STARTING UP THE BAKING CHAMBER IN MANUAL
MODE
Using the appliance in Manual mode enables the operator to work in an
"open" manner, i.e. to change the working parameters at any time.
The fact that the appliance is in Manual mode is confirmed by the
relevant icon (Chef) and by the explanatory message on the display
(fig.29).

TEMPERATURE SETTINGS

To set the temperatures on the oven floor and ceiling, use the
"CURSOR" button to scroll through the display until the required
temperature is highlighted. Then press the "+" and/or "-" buttons to
increase and/or decrease the parameter. Once the required value has
been set it is not necessary to confirm, as the parameter is received and
implemented in real time.
NOTE: The operation described above can also be carried out
while baking is in progress.
If the Split-Deck function is not being used, only the two temperatures
(ceiling and floor) are displayed (fig.30). Split-Deck technology allows
4 different temperatures (rather than 2) to be set and managed inside
the baking chamber (fig.31a): 2 temperatures (ceiling and floor) for the
front part and 2 temperatures (ceiling and floor) for the rear part. This
technology allows simultaneous baking of different foods, giving the
oven unrivalled versatility.
NOTE: Even when operation in two areas is selected, temperature
is in any case controlled independently in the four areas. If, when
using a program requiring baking in four areas, the setting is then
changed to two areas, the set point temperature used for the two
areas is the temperature of the ceiling and floor in the front area of
the oven.
"Smart-Baking" technology allows the setting and control of 1
temperature inside the cooking chamber and 2 power levels as
percentages (floor and ceiling) (see fig. 31b). Open the Smart-Baking
technology function by pressing the Smart-Baking button (see fig. 27 –
item 13).
Baking chamber adjustment is set for a maximum temperature of
450°C. If this temperature is exceeded due to an anomaly, the safety
thermostat will intervene, switching off the oven to block its operation.
The screen will display the alarm situation that occurred (see 3.4).
The alarm signal (visual and acoustic) will continue until the "OK"
button is pressed. Wait for the oven to cool.
Unscrew the cap from the safety thermostat (item A fig.19) and press
down.
The button will reset the thermostat and after the "OK" button is
pressed, the oven will restart normally.
Refit the protective cap on the safety thermostat to prevent this
instrument from becoming damaged and affecting the operation of the
oven.
WARNING! If this operation is carried out while the oven is hot
and without waiting for it to cool down, the manual safety
thermostat will prevent the oven from being reset.
When an anomaly occurs, it is necessary to request the intervention
of the technical assistance service.
NOTE: The temperatures of the ceiling and floor, front and back
are not tied to one another as this guarantees greater flexibility for
the operator. According to the set temperature range and the load,
the four or two temperature settings could influence one another,
no longer guaranteeing that the set temperatures will be reached
and/or it may even be possible that the set temperatures will be
exceeded.
SWITCHING ON THE HEATING ELEMENTS
To turn the heating elements on and thus start heating up the baking
chamber, simply press the "START/STOP" button. When the heating
elements switch on, this is indicated on the display in real time by the
bar located between the set temperature and the actual temperature
values. This graphic display also provides information on the power
level employed by the heating elements at any time, shown by how
much of the bar itself is lit up. In the initial phase, after the heating
elements have been switched on, the wording "Heating up" will be
displayed in the line of text with explanatory messages, alternating with
the wording "Manual baking".
The wording "Load oven and press OK" appears only when all the
areas of the oven reach the set-point temperatures (unless a "delta T" is
set). To cut off the power supply to the heating elements, press the
"START/STOP" button.
NOTE: Temperature control is electronic and uses cutting-edge
P.I.D: power is delivered proportionately according to the actual
requirement identified. The oven has a virtually infinite power
spectrum, with the optimum setting being chosen instant by
instant.
NOTE For good baking results, before putting food in the oven,
wait until all the areas reach the set-point.
SETTING THE STEAM EXHAUST VALVE
The cooking steam exhaust valve is located on the right hand side of
the rear part of the baking chamber, and is electrically controlled. To
adjust valve opening/closure, it is necessary to press the corresponding
button and the icon on the display will show the state of the valve
(fig.32).
The valve can be set to one of 5 different positions:

0 (completely closed)
-
1/4 (25% open)
-
1/2 (50% open)
-
3/4 (75% open)
-
1 (completely open)
Valve opening/closure is a direct access function and therefore, it can
be enabled at any time.
NOTE: Every time that the heating elements are switched on again
by pressing the "START/STOP" button, the valve will commence a
reset procedure, stopping in the position used for the last baking
operation.
SETTING THE STEAM GENERATOR (STEAMER)
This function allows "calibrated" amounts of steam to be emitted into
the baking chamber. To enable the function, scroll through the
parameters on the display with the "CURSOR" until "EXTRAMENU"
is highlighted, then press "OK". In the screen that is displayed, select
the submenu "Steamer", using the "+" and "-" buttons to scroll through
the list. Press "OK" to confirm your selection.
The display shows another submenu entitled "Steamer": scroll through
the list using the "+" and "-" buttons to select the following items:

"Emit steam": emits steam into the baking chamber "Enable":
-
"Enable": turns the boiler used to produce the steam on
-
"Steam duration": sets the amount of steam, measured by the time
the electrovalve remains open
For each of these items it is possible to make further choices, selected
using the "+" and "-" buttons and pressing "OK" to confirm. To return
to the previous screens, press the "RETURN" button one or more
times. Once all selections have been made, an icon will be shown on
the main display indicating that the "Steam" function has been
activated successfully.
