• Clean the appliance following the instruc-
tions given in Chapter " INSTRUCTIONS
FOR CLEANING".
• Do not store flammable materials in close
proximity to the appliance. FIRE HAZARD.
• The appliance may be used by children no
younger than 8 years of age and by per-
sons with reduced physical, sensory or
mental capabilities, or lack of experience
and knowledge, as long as they are super-
vised or have been instructed concerning
safe use of the appliance, understanding
the hazards involved. Children must not
be allowed to play with the appliance.
• Cleaning and maintenance to be carried
out by the user must not be performed by
unsupervised children.
• Do not obstruct any air vents or drains pre-
sent on the appliance.
• Do not tamper with appliance components.
• For the indirect heat boiling pans: each
time the appliance is started up, after 10/15
minutes, discharge the air from the cavity
by pressing air valve . This guarantees an
optimum pressure inside the cavity (better
cooking and energy-saving), releasing the
air inside.
IMPORTANT!With indirect heat boiling
pans and boiling pans with autoclave lid,
do not open drain taps or other emptying
devices until the pressure has reduced to
approximately atmospheric pressure.
N.B.: To ensure correct hygiene and redu-
ce the wear and breakage of the tap, remo-
ve, clean and lubricate periodically (once a
week) using food-grade grease. (For details
refer to the sheet included in the package).
13 DIRECT HEAT GAS BOILING PAN
REMINDERS FOR USE
• The appliance is designed for cooking and preparing food in
water.
• Do not light the pilot burner or leave it on when there is no
water in the well.
• Do not activate the heating system when there is no water in
the well.
• While the appliance is on, the water level must be maintained
level with or above the minimum level indicated on the wall
of the well.

• Use very fine grained salt, adding it to the tank when the wa-
ter is boiling. Do not use coarse-grained rock salt in the tank.
• At the end of each day, clean the well thoroughly in order to
prevent the formation of corrosive deposits.
FILLING AND EMPTYING THE WELL
Filling
The control knob has the following positions:
0 Off
(BLUE) Cold water filling
1 Electrical power ON
(RED) Hot water filling
• Open the lid.
• Turn the handle of the front discharge tap clockwise. The tap
is only completely closed when the handle is in the vertical
position.
• Turn the control knob to select hot or cold water for filling.
Water fills from tap on the countertop.
• Fill the well until the water is level with the maximum level in-
dicated on the wall of the well. Do not use the appliance with
the water level above the maximum indicated level.
• To interrupt filling, turn the knob to "0" or "1".
Emptying
Lift and turn the handle of the front discharge tap anti-clockwi-
se. When the tap is open the handle remains in the horizontal
position.
BURNER IGNITION AND EXTINCTION
The gas valve control knob has the following positions
Off
Pilot ignition
Maximum flame
Pilot ignition
Make sure the control knob is turned to "1".

• Press the knob fully down to activate the electronic ignition
and light the pilot burner.
• Hold the knob down for about 20 seconds before releasing it.
If the pilot flame goes out, repeat the operation.
• The pilot flame can be seen through the peep hole on the
control panel.
Main burner ignition
Make sure the control knob is turned to "1".
