11 MANUAL UNLOADING OF TROUGHS
In the event of a power failure, you can unload the troughs manually:
A. Remove the protective panel to gain access to the motor (fig.4, n°21).
B. Remove the M8 screw and washer (fig.4, n°22).
Unscrew the M6 setscrew located in the hub of the 17-tooth sprocket (fig.4, n°25) in order to
release the drive (fig.4, n°23). Fit the ratchet supplied with your machine into its socket (fig.4,
n°26) and remove the drive collar (fig.4, n°24) by turning the ratchet in either direction.
Once the drive collar has been removed, you can turn the ratchet to enable you to unload the
troughs manually, as you see fit.
Once the tray proofer has been emptied completely, the parts must be reassembled by
reversing the operating procedure and ensuring that one trough is in the inverted position
before refitting the drive collar into its original location. Turn the ratchet as many times as
necessary to achieve this positioning.
If this procedure is not followed, the loading position of the dough pieces in the trough

(at the distributor) will be incorrect.
