2. HOW THE BREWER WORKS
Coffee and tea are brewed by passing hot water through a prepackaged capsule containing
ground coffee, or tea leaves, dispensing an outstanding freshly brewed drink.
The brewer offers four selections of coffee drinks, 4oz, 6oz, 8oz and 10oz, and four different
steeping times of tea drinks with a pre-set volume of 7oz. Each comes with custom pre-infusion
and pulse-brew routine.
Boiler temperature is set at 200°F (93°C) and can be adjusted only by authorized personnel.
WARNING! The OC brewer dispenses hot liquids, risk of scalding with hot water.
PRE-INFUSION
Coffee selections 6, 8 and 10oz begin the brew cycle with pre-infusion, which can be noticed
when the brewer stops for two seconds after the capsule has been filled with hot water. This
particular technique allows coffee grounds to swell when in contact with hot water allowing bet-
ter extraction. Proof of the pre-infusion is a slow drip from the spout prior to extraction.
PULSE-BREW
The internal dual-pump system modulates the way water is pushed through the capsule and
optimizes extraction based on the drink size. A variation of noise during extraction can be heard
and is perfectly normal.
STEEPING
To allow the tea leaves to steep properly, each recipe consists of a series of short brews alter-
nated with prolonged pauses: the stronger the tea, the longer the steeping times.
