Dissolve the yeast in lukewarm milk. Add
flour, salt and vanilla sugar to the bowl and
mix well with the yeast-milk and the eggs. Al-
low the mixture to rest at a warm location for
approximately 40 minutes. Finally stir in the
melted but no longer hot butter and the large
sugar crystals.
Pour half a ladle full onto each half of the
waffle plate. Allow the waffles to bake for 5-8
minutes to a golden brown
Baking lard biscuit rings,
doughnuts and ring doughnuts
Lard biscuit rings/doughnuts (approx . 12
pieces)
130 g of sugar
250 g flour
2 packets of vanilla sugar
¼ litre of milk
3 eggs
5 tablespoons of cooking oil
1 packet of baking powder
a little icing sugar for sprinkling
Mix all ingredients to a smooth batter and put
aside for a while.
Gradually fill the moulds in the lower lard
biscuit ring/doughnut plate with the help of a
tablespoon (5 ml) and bake for 4-5 minutes.
Remove the lard biscuit rings/doughnuts
from the appliance and sprinkle with icing
sugar while still warm.
Quark doughnuts (approx . 12 pieces)
250 g of flour
125 g of sugar
250 g of quark
3 eggs
1 packet of baking powder
2 packet of vanilla sugar
Put all ingredients into a bowl and mix to a
smooth batter.
Use a tablespoon to take out suitably-sized
portions and pour into the moulds in the
lower lard biscuit ring/doughnut plate. Bake
the lard biscuit rings for approx. 4-5 minutes.
Tip: give the lard biscuit rings a special note
by adding a small portion of rum or raisins.
Ring doughnuts with summer lavender
cherries
Ingredients for ring doughnuts (for 2-4 per-
sons):
135 g of sugar
260 g flour (sifted)
Pulp of a vanilla pod
1 packet of baking powder
5 tablespoons of oil
250 ml of milk
3 eggs
1 pinch of salt
100 g lavender sugar
Ingredients for lavender cherries:
400 g sweet cherries without stones
200 ml cherry juice
50 g brown cane sugar
Juice of a lemon
3 branches of lavender tips
A little starch (stirred into a little water)
First prepare the lavender cherries. Caramel-
ise the sugar briefly in a pot and deglaze with
the cherry and lemon juice. Simmer every-
thing strongly for approx. 3-4 minutes. Add
the cherries and the fresh lavender lavender
blossoms. Allow the compote to boil lightly
once and thicken with the starch.
For the ring doughnuts, mix the sugar, eggs
and vanilla pulp with a hand mixer. Add flour,
milk, salt, baking powder and oil and mix to a
smooth batter with the mixer. Allow the batter
to stand for approx. 15 min and subsequently
fill into a piping bag for portioning.
Lay the doughnut plate into the Multi-Star 5
in 1 and switch on the appliance. When the
Multi-Star has reached the baking tempera-
ture, inject the dough in the lower doughnut
mould and bake the ring doughnuts to the
desired browning.
Flip the finished ring doughnuts in the lav-
ender sugar, arrange on a plate and serve
with the lavender cherries. Garnish with a
peppermint sprig.
