Remember that whole grains such as wheat berries and brown rice always remain a bit chewy,
even when thoroughly cooked.
Grains that have the same cooking time may be cooked together (such as beans and rice).
Leftover grains may be frozen in convenient portion sizes. Defrost them in the microwave.
Precautions when cooking grains:
When cooking dried grains alone (rather than in a soup or stew), never fill Ultra Cooker more
than the one half (1/2) line on the interior measurement guide.
To reduce excess foaming as grains cook, always add one tablespoon of oil per cup of dried
beans.
Do not cook more than 3 rice measuring cups (2 cups of dried grains) at a time.
Clean the pressure release valve, pressure indicator valve and rod, and silicone gasket thor-
oughly after cooking grains.
Close lid and lock setting Pressure Release Valve to the "down pressure" position. Turn the
pressure control to "Low"- Press the "Rice" function button and then press start. Cooker will
automatically choose the correct cooking time. When rice is finished the cooker will shut off
automatically and go into a warming mode – four dashes will appear on the front panel (----).
Allow pressure to drop naturally, when the release valve drops it is safe to open the cooker.
Wild Mushroom Risotto:
1 Package of mushrooms, chopped (8 ounces)
2 Cups Arborio rice
4 Cups chicken or vegetable broth
1/4 Cup dry vermouth or white wine, (not cooking wine – cooking wine is very salty)
2 Tbsp. shallots, chopped
1/4 Cup Parmesan cheese
3 Tbsp. olive oil
Salt and pepper to taste
DIRECTIONS:
1. Using the "Browning Function" heat olive oil in the interior pot.

3. Add Arborio rice stirring constantly for an additional minute.
4. Add broth and wine and stir mixture together.
