Use of the pasta cutter
According to the model in use, strips of different widths can be obtained (2, 4, 6 and 12 mm.).
Thickness of pasta to be used must be maximum 3 mm. To avoid precocious wear out of the cutting rolls on
the pasta cutter, it is advisable to mount the unit only when necessary.
Recommendations for use
To obtain the desired pasta thickness, it is advisable to infeed it various times and reduce the thickness
adjustment at each cycle. The stop bar knob is mainly used during repetitive workings, that is, when it is
necessary to bring many dough rolls to the same thickness.
Proceed as follows:
•
Totally loosen knob.
•
Adjust the mobile roll in the desired position by adjusting the lever.
•
Tighten-up knob to the stop bar; in this way, at each cycle, it is only sufficient to pull the adjustment
lever up to the stop bar.
Cleaning and maintenance of the machine
Daily cleaning:
•
Remove the plug from the electrical socket at the end of the day.
•
Accurately clean using neutral products.
•
Clean external machine parts with a damp sponge.
•
Do not use metallic pads and abrasive detergents.
•
Clean knives as follows:
- remove springs;
- rotate knife shafts inwards to make them lower;
- clean knives and rolls;
- rotate knife shafts outwards and put springs back on.
INFORMATION: Before each work cycle make sure the roller blades are correctly fastened.
