• Take out the gasket, check that it is in good condition and that its seating is clean (a worn gasket or the presence of dirt underneath it can
cause leaks).
• Replace the gasket making sure it is sitting under all the lid rim lugs.
• If you use your pressure cooker every day, the gasket will last about twelve months.
• Check that the pressure indicator slides freely in the slot.
5 • FILLING
• Steaming (with basket):
Never use the pressure cooker with less than 75 cl (750 ml) of water.
• Simmering (without basket):
Never use the pressure cooker with less than 25 cl (250 ml) of water.
Never fill your pressure cooker to more than 2/3 of its capacity (fig. 1)
• WARNING : To avoid obstructing the holes of the regulator and safety valve, it is essential to take the following precautions: Never fill the
pressure cooker beyond 1/3 of its capacity (fig. 2) when cooking foods that swell or form scum such as spinach, lentils, split peas, pasta,
rice, stewed fruit, rhubarb, barley, oatmeal and other cereals, etc. Never fill the pressure cooker beyond 1/3 of its capacity (fig. 2) when
cooking leafy vegetables that may stick to the inside of the lid, such as lettuce, leeks, artichokes, etc. Never wrap food in paper (aluminium
foil or other cooking paper).

6 • CLOSING
• Place the lid on the pressure cooker body.
• Press down on the lid to compress the gasket then turn the locking handle anticlockwise until it clicks. (fig. 3) The line on the knob must face
the locked padlock logo. (Fig. 4)
• The pressure cooker is properly closed when the pressure indicator is free to move up.
• WARNING : Never put the pressure cooker onto a heat source if the lid is not locked onto the body or if it is only partly closed.

7 • COOKING

• Place the food items inside with sufficient cooking water and close the pressure cooker.
• Press down on the regulator to make sure it has gone down to the notch.
• Make sure the regulator is in the cook position (Regulator line set to I (50 kPa) or II (100 kPa). (fig. 5)
• The line is marking on the side of the regulator.
• Heat at full power. Never put your pressure cooker in the oven.
• Put the pressure cooker on the hob on a high setting in such a way that the regulator is always to the
left of the knob, to ensure that the steam rises to the back or the side when cooking.
• Under pressure, the pressure indicator lifts up and locks the opening safety device.
• When steam starts to escape from the regulator, start counting down the cooking time.
• Then lower the heat until only a little steam escapes from the regulator (the regulator may also work
intermittently).
• When the regulator lets steam escape, do not expect it to rotate as it is not designed to do so.
• If you have used salt in your recipe, dissolve it straight away by stirring the water with a wooden
spoon. This will avoid pitting marks on the bottom of your pressure cooker. Dissolving salt is easier if
you use fine salt and hot water.
