1. INTRODUCTION
Sous Vide it is a method of cooking originated in France in the 1970s, in which food is placed in a sealed plastic bag under
vacuum or in a glass jar and cooked in a water bath for longer than usual cooking times (usually 1 to 7 hours, up to 72 hours
or more in some cases) at a precisely regulated temperature.
The temperature is much lower than that usually set for cooking, typically around 55 to 60 °C (130 to 140 °F) for meat,
and a bit higher for vegetables. The intent is to cook the item evenly, ensuring that the inside is properly cooked without
overcooking the outside, and to retain moisture.
With traditional cooking methods it is sometimes hard to control the temperature of cooking.
Sous Vide technology provides constant temperature regulation (accurate up to 0.1 °C) and a cooking timer, as in the best
restaurants.
1.1 SOUS VIDE TECHNOLOGY
1. The aim of Sous Vide-vacuum cooking device is to maintain the nutritional qualities of the ingredient unaltered and to
obtain even cooking of foods, thanks to the 360° water cycle that keeps the temperature constant.
2. The three-dimensional heating technology ensures that the temperature is evenly distributed, keeping the flavours,
colours and vitamins of the food at their natural state.
3. Precise temperature control: a temperature difference of 1 °C can have a major effect during the cooking phase. For
this reason, the temperature of the device is precise and constantly monitored with an accuracy of 0.1 °C. In addition, it
is easy to adjust to facilitate the cooking process.
4. Precise time control: thanks to the precision timer, it is impossible to overcook food. The time range goes from minute 0
to 99 hours and 59 minutes. Once the previously set cooking time has been reached, the device will automatically emit
a warning. This way you can relax without having to worry about your food.
