8.1
Daily, by a trained user
A. Check whether you need to empty the crumb tray (NB: don't forget to lock the door with the key)
(fig.1, n°8).
B. Clean the tables (fig.3, n°13, 15) using a brush.
C. Clean the cover window (fig.1, n°1) by placing the top tray (fig.10, n°41) in the vertical position
and then the top cover in the cleaning position (fig.10). Ensure that the top tray is in a stable
position.
D. Use a dry cloth to clean the inside.
E. Use a damp cloth to maintain the outside.
F. Activate cleaning mode:
If your machine is fitted with a touch screen, press the "advanced settings" symbol in the top
right-hand corner.
If your machine is fitted with a capacitive interface screen, press the "Settings" symbol in the top
right-hand corner and start the cleaning mode using the Start/Stop button
If your machine is fitted with a 3-button panel, press the left (fig. 9 n°46) and right (fig. 9 n°48)
hand buttons simultaneously.
Be sure to wear cut-resistant gloves (Standard EN 388: 2003 factor B= 5) at all times
when working in the vicinity of the blade or the claw.
The claw travels to the left. Use a dry cloth to clean the right-hand side of the infeed table (Fig.3,
n°15). If your slicer is equipped with an automatic claw (Fig.3, n°17), the teeth will extend. Use
a dry cloth to clean the teeth.
If your slicer has the pro VMP – VMA configuration, the blade will appear in the cutting channel.
Use a dry cloth to clean it. Never clean the "cutting edge" of the blade. The blade is free to rotate
on its shaft, you can rotate it in the channel to clean the entire side surfaces if you find that crumb
deposits have accumulated on them.
Close the cover once you have finished cleaning.
To exit the cleaning mode:

If your machine has the self-service configuration, press one of the three buttons.

If your machine has the Pro configuration and is fitted with a touch screen, press the
cross top left on your screen.

If your machine has the Pro configuration and is fitted with a capacitive interface screen,
press the Start/Stop button.
8.2
Every 25,000 loaves and/or at least once a year, by an approved agent.
A. Remove the plug from the socket (fig.2, n°12).
B. Check the condition of the cutting blade (fig.1, n°2).
C. If you notice a degradation in cutting quality, the cutting blade will need to be replaced (JAC part
number: 6110029 (or AF.6110029 if exchanging) in the JAC Spare Parts catalogue).
D. If the blade needs to be replaced, do so in accordance with the blade replacement procedure
(fig.7).
E. Clean with a brush and vacuum the inside of the machine.
