IMPORTANT:
Once you've finished sharpening your knife, it should be rinsed under
running water to remove dust from the sharpening.
If you don't notice a discernible difference after some time, the angle of knife is
significantly greater than the angle adapter in use. This means that a relatively
large amount of material needs removing. If you are using angle adapter B,
switch to angle adapter A. If this is already in use, please continue sharpening
your knife until it is noticeably sharper. This is necessary only once if you con-
tinue to regularly use the V-Edge to sharpen your knives – because now the
blade has the ideal V-Edge angle.
IMPORTANT:
Place the V-Edge on your kitchen work surface within reach and insert
a sharpener with a fine grain (such as the green sharpener). That
way, you can simply pull your knives through the V-Edge a couple of
times before each use and ensure that they stay sharp for a long time.

Advanced sharpening
The following is intended for anyone who is already experienced at knife
sharpening or who wishes to become so.
Secondary angle
Once a knife has been sharpened using angle adapter B, we recommend
sharpening it 3–5 times with a fine sharpener while using adapter A's greater
sharpening angle.
This B–A angle combination is greatly advantageous. Using adapter B gives
the blade a very thin cutting edge. Subsequently sharpening it with adapter
A then provides the edge with greater stability (see cross-section). This makes
the edge more robust and the knife will stay sharp longer.

Complete deburring after sharpening
Sharpening can result in a fine burr along the blade that prevents the knife
from feeling sharp. To remove this burr and fully restore the cutting edge, we
recommend pulling the knife across a leather stropping block after sharpening
(e.g. ZWILLING leather stropping block, art. no. 32501-100).
You can also simply apply a polishing paste to the V-Edge's sharpening stones.
Sharpening a blade with polishing paste usually prevents the necessity for
deburring and results in a particularly fine surface.
