RECIPES
❖ BREAD
Ingredients:
500 g flour "00"
350 g water
10 g fresh brewer's yeast
1 teaspoon salt
1 teaspoon sugar
1. Put the water at room temperature, sugar and crumbled brewer's yeast into the bowl of the mixer and combine.
2. Use the flat paddle at medium-low speed, add the flour little at a time and the salt, combining well before adding
more.
3. When the mixture begins to thicken, turn off the appliance and replace the paddle with a dough hook; work until all
the flour is mixed into the dough and again for a few minutes, until you have a uniform and elastic dough that is
moist and sticky. Put it on a floured surface, fold it over several times and lay it on a baking tray lined with
parchment paper.
4. Let rise in a cool oven with the light on until the volume is doubled, put it back on the floured surface and fold
several times again. Sprinkle the dough with some flour and repeat the folding. Form a loaf.
5. Let rise in a closed oven for another 20 minutes. Use a sharp knife to make shallow cuts on the top of the loaf and
let rise for another 20 minutes.
6. Preheat the oven to 200 °C with fan. Put a small bowl of water at the bottom to help humidify your dough.
7. Bake the loaf for 30 minutes, then remove the bowl of water and bake for another 5 minutes until golden brown.
Take out and let cool on a rack.

❖ MAYONNAISE
Ingredients:
1 egg
1 yolk
lemon juice to taste
100 ml olive oil
100 ml sunflower oil
salt and pepper to taste
1. Using the ingredients at room temperature, combine the egg, yolk and lemon juice in the bowl of the mixer and
whisk with the whip whisk at high speed, until the mixture is foamy and homogeneous.
2. Then add the two oils: while mixing, pour them in the bowl.
3. Once finished and when the mixture is thickened, add salt and pepper and, if needed, a little more lemon juice.
Check that the plug of the appliance is correctly inserted
into the socket.
Turn off the appliance, remove it from the bowl and quickly
knead by hand to mix all the flour. Resume processing with
hooks for a minute.
Use fresh and cold cream from the refrigerator.
