MASHING
Fill up the brew kettle with the mash water
and put the malt pipe in the brew kettle.
Turn the rotary power switch to full capacity
and the temperature switch to about 5 °C
above the first temperature you need to
achieve according to your mash scheme.
Check with an external thermometer; the
temperature of the liquid on the surface of
the kettle can differ from the temperature at
the bottom of the kettle, which is measured
by the brew kettle.
Once the water has reached the desired
temperature, pour the malt into the malt
pipe. Drain a small amount of liquid (max-
imum 2 litre) from the valve of the brew
kettle and pour this over the malt. Stir in
the mash to get out all of the lumps and
level the temperature to the first step of your
mash scheme.
Once the fluid levels inside and outside of
the malt pipe have reached the same height,
slowly start draining liquid from the valve of
the brew kettle. Pour this drained liquid over
the mash over and over again during the
whole mash process. This circulation pro-
cess will assure that the malt will not scorch
on the bottom of the malt pipe. To reach the
next temperature level on the mash scheme,
