Muesli with honey nuts
Preparation time: ca. 15 Min. | For 2 people

apples, grated
1 tbsp lemon juice
1 tsp
liquid honey

plain yoghurt

low-fat cheese curd

walnuts, roughly chopped
1 tsp
liquid honey

soy flakes
Portion: 399 kcal, F 21 g, Ch 28 g, P 20 g

1. Mix the apples, lemon juice and honey. Mix in the
yoghurt and low-fat cheese curd.
2. Roast the nuts in an uncoated frying pan, drizzle
with honey, roast for another 1 minute. Let the
nuts cool down a little, sprinkle the soy flakes
over the Muesli.
Apple strudel
Preparation time: ca. 40 Min. | Resting time: ca. 30 Min. | Baking time: ca. 35 Min.

flour
1/2 tsp
salt

fresh egg
3 tbsp rapeseed oil
5 tbsp lukewarm water
50 g
dark sultanas
2 tbsp rum or apple juice
600 g
apples (e.g. Boskoop), grated
1
organic lemon, a little grated peel
and 1 tbsp juice
4 tbsp sugar
1/4 tsp
cinnamon
50 g
butter, melted, cooled
4 tbsp ground almonds
confectioners' sugar for dusting
Goes well with: custard.
Portion (1/8): 323 kcal, F 14 g, Ch 40 g, P 6 g
1. Combine the flour and salt in a bowl. Mix the
egg, oil and water well together, combine with a
ladle, knead on a little flour until forming smooth
and supple dough. Form a ball and place under
a bowl that has been rinsed with hot water, let it
rest at room temperature for about 30 Min.
2. Mix the sultanas and the rum, let it rest for about
10 Min. Mix the apples and all the ingredients
including the cinnamon.
3. Roll out the dough as thinly as possible on a little
flour, place on a towel. Dust your hands with flour
and pull carefully starting from the middle until
the dough is translucent.
4. Sprinkle a little butter on the dough, spread the
almonds and filling on the bottom half of the
dough leaving an edge of about 4 cm, press in
the edges. Lift the towel, roll the strudel tightly,
place it, seal down, on a baking sheet lined with
baking paper, brush with a little butter.
5. Bake for about 35 Min. in the middle of an oven
preheated at 200 degrees. Brush the strudel with
the remaining butter several times during baking.
Take out, let it cool down a little on a cooling
grid, dust with confectioners' sugar.
