The hand piece and the blade must be
cleaned and disinfected daily with drink-
ing water at ≥ 80 °C in accordance with
DIN 10516:2009-05, table 3.
When daily cleaning, examine all parts for wear,
fracture, cracking, or other signs of damage. Make
sure particularly that meat and other residue is re-
moved regularly. Dismantle the blade according to sec-
tion 2.1.2 and the depth gauge according to section 2.1.3.
Pull the pinion out of the head piece. Unscrew the grease
cup from the head piece.
Twist the hand piece to detach it from the grip unit. Twist
the grip piece to detach it from the turnlock fastener. Draw
the grip screw out of the grip piece. Clean the parts thor-
oughly with a brush and detergent. Rinse with water and
let it dry.
Do not use aggressive detergent! To connect the
hand piece, follow the above instructions in re-
verse order.
After connecting, press the grease cup button two
to three times.

should be along the inside of the blade. When cutting
does not improve, the blade must be replaced. Contact
the area representative or the manufacturer for further in-
formation.

Make sure that the steel is held flat and over the blade's
centre line.

The inside edge is hardened at the press of the button
when the machine is running. At the same time the hand

mercially available grinding machine.
