II - OPERATING INSTRUCTIONS
This unit is designed as a cooking appliance in a
watery medium and must be used exclusively by
qualified personnel in the manner set down in this
instruction manual. All inappropriate uses are
dangerous.

1 - IMPORTANT

• Read this booklet carefully, as it gives important
installation,
safety,
suggestions.
• Keep this booklet handy for any future reference.
• The installation of the appliance and its adaptation to
other types of gas must be carried out exclusively by
professionally qualified personnel.
• To limit energy consumption (gas, water) the
appliance should not be used for long periods when
empty or in conditions that are unfavourable for
optimum efficiency (e.g., with lid open, etc.).
• For any repairs, turn only to a technical assistance
centre authorized by the manufacturer and demand
that only original spare parts be used..
Failure to comply with the above recommendations
could compromise the safety of the appliance.
2 - STARTING THE APPLIANCE (pages 5 and 6)
Before putting the appliance to use, wash the inside of
the pan carefully with warm water and detergent and
rinse freely.
WARNING
Never put the appliance to use before filling the tank
with water.
Failure to comply with this essential point would
seriously overheat and damage the stainless steel
tank and the other internal components.

3 - FILLING THE TANK

• Check that the tank emptying tap "A" is closed.
• Turn the water spout "D" toward the inside of the tank
and open the two taps "B" or "C" of the hot and cold
water. The maximum water level in the tank must be
at least 4 cm below the rim, and if necessary still
lower if there is a danger (in the autoclave models)
that the food being cooked could clog the safety valve
on the lid.
• Close the lid.
ATTENTION!
When closing the autoclave lid, tighten the clamps
"S" by operating on them, gradually and evenly, in a
diametrically opposed progression.

4 - HEATING

• Connect the gas supply by operating on the valve
installed upstream of the appliance.
• Press and rotate the gas control knob "F" from the
OFF position to the PILOT IGNITION position.
The gas valve control knob "F" has 4 settings:

MAX. FLAME

• Press the knob "F " all the way and at the same time
click a few times the push-button of the piezoelectric
igniter "G" to light up the pilot flame. Release the knob
"F" about 20 seconds after ignition; the flame should
remain lit. If the flame goes out, repeat the operation.
• The pilot burner flame can be checked through the
inspection port "E".
• The main burner can be ignited by turning the knob "F
" from the PILOT IGNITION setting to the MAX.
FLAME or MIN. FLAME setting.
• On autoclave-type appliances, when the pressure
inside the tank reaches 0.05 bar, the weight-
controlled safety valve "R" on the lid will start to vent.
• At this point, depending on the type of food being
cooked, the heat input will have to be lowered by
rotating the gas valve knob to the MIN. FLAME
position, so as to avoid steam leaks through the
valve.

5 - END OF COOKING

5.1 - Extinguishing the burner

• At the end of the cooking cycle, rotate the knob "F" to
the PILOT IGNITION position to extinguish only the
main burner.
ATTENTION!
Open the lid carefully to avoid being scalded by the
steam or by contact with hot parts.
The opening of the pressure lid must start only
when the operator has made sure that there is no
pressure inside the tank, by pressing the vent
button on the safety valve "R".
The individual holding clamps on the lid must be
loosened partially and gradually.
Once a day, open the lid and let go of the handle to
check that it remains in raised position. Every six
months, have a qualified technician check the condition
of the lid balancing spring.
Always keep your hands away from under the
raised lid.
• Discharge the tank contents through the emptying tap
"A".

5.2 - End of operation

• Turn the gas valve control knob "F" to position OFF to
also extinguish the pilot burner.
• Close the gas supply valve.
