CLEANING
Cleaning must be carried out at the end of each use in accordance with hygiene regulations and to protect
the functionality of the oven.
Cleaning the chamber:
The oven chamber, reaching 500°C (1,000°F) cleans itself, thanks to pyrolysis (Pyro-fire Lysis-Separation). This is a
process that uses very high heat to decompose organic materials by carbonising them into volatile
compounds.
To activate pyrolysis, it is recommended to maintain a temperature of 500°C (1,000°F) for 2-3 minutes.
Cleaning the hob:
Once pyrolysis is complete, wait for the oven to cool down to remove residues left on the hob with the brush
and wipe it gently with a damp cloth after each use
Cleaning the outside of the oven (stainless steel surfaces):
This operation must be carried out when the oven is cold.
Protection of stainless steel.
To protect stainless steel parts, we recommend the use of Vaseline oil (or olive oil). If the oven is to be installed
in a marine location, it is advisable to clean it frequently with fresh water to prevent corrosion and scaling due
to salt.
Ash pan cleaning:
When the oven is cold, take out the ash pan and empty it.
Remove any residue by blowing air or using a soft brush.
Cleaning the chimney:
Each time before lighting the oven, check that it is free of objects and any remaining ash.
Twice a year check for Creosote (flammable soot) and remove it to reduce the risk of fire.
IT IS RECOMMENDED THAT THE OPERATOR USES SUITABLE GLOVES AND CLOTHING TO AVOID
BURNS.
FOR CLEANING, IT IS PROHIBITED TO USE: JETS OF WATER, ABRASIVE POWDERS, CORROSIVE
SUBSTANCES OR ANYTHING ELSE THAT COULD DAMAGE THE COMPONENTS AND COMPROMISE
SAFETY IN GENERAL AND HYGIENE IN PARTICULAR.

For all extraordinary maintenance, repairs and/or replacements, contact only the authorised dealer from
whom you purchased the oven and/or an authorised technician in possession of the technical-professional
skills required by current regulations.
