4. By request, the machine can be supplied with 2 speeds; in that case
the control panel is provided with a second starting button (Fig.5.2.
n°4).

5.3 Machine loading

Lift the guard and put into the bowl the ingredients required by the recipe
up to the maximum amount according to the dough capacity, indicated in
the Table 3.1. and 3.2. Keep within the maximum limit of dough hardness
as indicated under paragraph 3.3. There is no particular indication about
the order in which the ingredients must be put into the bowl.

5.4 Functioning

After the electrical connection and the loading have been carried out, the
machine is ready to work. For this purpose give voltage to the machine,
lower the guard – as far as the models GALASSIA SUPER and GALASSIA
SPECIAL, it necessary to hook the head – release the emergency button
and press the start button.
The machine will start the required operation; after the inspection of the
dough, stop the machine. This operation can be performed either by
switching on the emergency pushbutton or by lifting the guard while the
machine is working. Use always the proper opening of the guard when
carrying out the manual inspection of the dough or when adding
ingredients.

5.5 Dough discharge

As far as the models GALASSIA SPECIAL are concerned, when the
working is finished, unhook the head by pulling the lever on the inferior part
of the same head and reverse it to get to the bowl. As far as the models
GALASSIA SUPER are concerned, unhook, reverse the head and take out
the bowl by rising it strongly.
